Pasta with Jalapeno Pesto
This was a great new twist on basic pesto! I did change a few things; we used walnuts instead of pumpkin seeds and roasted the tomatoes with a little olive oil, sea salt and pepper. I served this with a piece of toast and goat cheese. We have plenty of pesto left over and I will probably use it on homemade pizza's this week.

Shrimp and Quinoa
This is the perfect light and fresh summer meal. I am always looking for new quinoa recipes and this one is a keeper. Like other reviewers, I did not use the extra 2 tablespoons of olive oil, you don't need it and we didn't miss the extra fat. I also added a little cayenne pepper and used an extra lime. Next time I will use a little more ginger.

Quinoa with Peas and Parmesan
I found this recipe when I was searching for ways to cook with coconut oil - I am pregnant and coconut oil is suppose to be a "super food" for pregnancy. This is an awesome quinoa dish! Really feels like eating comfort food but is pretty healthy; this has become a winter staple for us. As suggested by other reviewers, I added more tomatoes and peas. I also added some roasted asparagus (roasted in oven at 400 with some olive oil and sea salt) then cut in pieces and added at the same time as peas.
