Banana Muffins II

I baked these in the jumbo muffin tins, 350 degrees for 25 minutes. Makes 6. I was so glad the insides were done as well as the outsides. Very moist cake. Great recipe. Thanks.

Whipping Cream Pound Cake

This recipe was given way too many stars. I really like how the crust is crispy. However, when the cake first comes out it is moist and spongy and the way a pound cake should be but after it cools it is no longer spongy and moist. It becomes dry. I also used 2 cups sugar instead of 3 and thought it was still too sweet. I had pound cake in the past where the pound cake remained moist no matter what and that's the recipe I'm looking for.

Banana Sour Cream Bread

This was really good. I froze one loaf and on day three I took it out and defrosted it. It was actually better than day 1 because you can taste the flavors. I did not put a topping. It doesn't really need one. I will definitely make this gain. It's a good way to use up sour cream as well.

Panellets (Catalan All-Saints Cookies)

We made this for my daughters Spanish project. These were really soft and hard to roll in the pine nuts. Some kept their crescent shape during baking and some melted. Maybe that's what the cornstarch is for, to soak up any excess liquid so it doesn't melt. The lemon was a little overpowering. Taste and texture-wise it was like eating the inside of a fig newton but with nuts and I do not like fig newtons or it's like the filling of baklava. It caramelized on the bottom so it stuck to the pan and when we removed them individually, they fell apart. We had to reshape them for the spanish project pictures. I'd suggest parchment paper to anyone making this. Different cultures have different tastes but I don't think I'll make this again. I gave it 3 stars only because my greek and latino co-workers asked for the recipe.

Maple Twists

These were good but they really spread so they were sticking to each other but I was still able to cut them apart. My husband really loved them. My co-worker called them Excellent and said it's good with coffee and another one asked for the recipe. My kids liked it without nuts but the nuts really did add more flavor to it. Use it if you have it. I just wish the nuts stuck to them but maybe I should chop the nuts a little finer or something. I did flip them over right away but you have to pick up the nuts and get them back on before it hardens. My daughter brought these to school and we were hoping she'd take home the leftovers but she didn't bring any home. They are fragile, if the length is too long they will break in half because of the twists. The cream cheese mixture tastes just like the frosting my mom uses on her carrot cake. Yummy. It is really sweet because of the maple syrup on the bottom but the maple syrup makes the bottom crunchy.

Hermit Bar Cookies

This was OK. I made it for a high school bake sale because the reviews were so good but then I was disappointed. If I had to describe it, without the raisins, the texture reminds me of the walls of a gingerbread house we make at Christmas. As for the taste, it tastes like a graham cracker but with a lot less sugar and a lot less crispy. This is a soft cookie but crispy on edges. I drizzled some white almond bark on top and woh did it make a difference. It made a good presentation and actually brought out the flavors of the cookie.

Donut Muffins

We were testing different recipes because my daughter has to bring treats to school, this is what we decided on bringing. So delicious. Mine were done in 20 minutes, made 24 pieces. The only think I did different was to double the cinnamon. I was pleased with how easy and fast it was to make and that I didn't need eggs.

Dad's Cookies

I just made these for the first time. They are soooo good. Made them exactly as is and wished I had doubled the recipe. Mine looked perfectly round and flat because I rolled into a ball and flattened with a fork slightly like it says to. It's supposed to look like that. It's good for stacking and taking to a party. Don't keep it in the oven until it looks done. Take it out as soon as you see it slightly browned. It will cook more on the pan. Yummy chewy cookies. I might lessen the oil next time just because the cookies feel oily when you handle them. But this is definitely a keeper.

Lick Your Lips Cake

Just FYI, there were two toppings for this cake. Of the two toppings, I use this other one if anyone wants to try it. 8oz creamcheese, 1 cup milk, 3.4oz vanilla instant pudding mix, 20 oz can crushed pineapple(well drained), 8oz carton cool whip, and nuts or coconut. Beat first 4 ingredients until thick and spread on cake. then spread the cool whip on top of the creamcheese mixture. Then Sprinkle with chopped walnuts or coconut. This topping tastes better. It also makes a prettier presentation with chopped walnuts sprinkled on top of the white cool whip. But if I don't have creamcheese, I just use the other topping that's in this recipe. Not as pretty because the topping is yellow on a yellow cake. Those who didn't like this cake would probably love it with the creamcheese topping.

Satiny Chocolate Glaze

Very good glaze. I used it on the Too Much Chocolate Cake recipe from this site. I got requests to make that cake again at our next family gathering. My daugher also took it to school for her colorguard banquet. I love how easy it is to make the glaze with no double boiler, one reviewer told us how to just pop it in the microwave for 45 seconds, then go straight to 15 second increments if it's still not melted when you stir it. Good tip because my chocolate never comes out right when I try to double boil.

World's Best Lasagna

This definitley is the World's Best and Restaurant Quality Lasagna. I had everything except sausage and basil but didn't miss it with all the other spices in there. So delicious. My teens and husband loved it. Thanks for sharing. Husband said it was the best lasagna he has ever had, same for me.

Too Much Chocolate Cake

I tried this for Valentine's day and my husband and kids loved it. My sister asked for the recipe. I did use the satiny chocolate glaze from this site. It is so good. Better the next day and really good at room temperature because the cold isn't masking any of the flavor. Plus, I like the frosting a little softer but my husband likes it fresh out of the fridge. It was so good I immediately made another one when this one disappeared so I could share it with co-workers. They loved it as well.

These cookies are very rich just like Baklava. I could only eat one. My batch made 37 cookies. I soaked in 9x13 pan as suggested here but the top of the cookie will stick to the pan if left longer than 15 minutes. 15 was enough. If you dip the top in sauce and then immediately roll the top on walnuts, they stick on better than if you sprinkled the walnuts. It also holds more of the sauce on top. It was worth trying but not my favorite cookie. I don't think I'll make them again. My rating would be 3 1/2 stars but we don't do halves here. Some call these Easter cookies and they look nice in pastel colored muffin cups. Will post photo. I think these are also called Melomakarona cookies without the alcohol.

Cauliflower Gratin

I didn't have swiss cheese or bacon bits so I substitued with 1 1/2 cups motzarell cheese. I Mixed 1/8 cup italian bread crumbs with 1/8 cup japanese panko crumbs and 1 1/2 tbs of melted butter then sprinkled that over the cheese to give it more flavor and crispiness. It came out pretty good. I also used fresh cauliflower cooked in water in the microwave for 5 minutes and drained to soften before baking. I will make again to try it with the fresh bacon and swiss cheese to compare flavors. thanks for the recipe.

Italian Wedding Cookies III

At first I hated this cookie because it was so crumbly. It disintegrated when my teenager went to grab one and I gave it two stars. I thought it was pretty bland but you really have to give it time to cool completely before tasting. This cookie is better on day 3 so make it days in advance of your event. It's less crumbly on the 2nd and 3rd day probably because the butter solidifies a little bit. This cookie grew on me and so I'm going to try bringing it to our Thanksgiving cookie contest and see how people like it. I'll edit this afterwards to let you know. co-workers liked it. I did follow others suggestions regarding salt and making it 1/3 vanilla and 2/3 almond extract. I think I'll try just using all extract next time. I also tried dipping the tops in chocolate and my teen loved it that way better. I will also try putting a chocolate kiss in the center and see how that does in the oven.

Crispy Almond Cookies

I added more almond exctact as suggested but have nothing to compare it to bec this was my first time baking these. I also reduced temp to 350 as suggested. They didn't come out that crispy probably bec I lowered the temperature. I will try leaving it at 375 next time but watch it so it doesn't burn. You can also drizzle chocolate on top or you can place a chocolate kiss in the center. If you bake with the chocolate kiss, the chocolate becomes stale-like so best to place the kisses as soon as the cookies come out of the oven. It's ok without the chocolate too. I refrigerated overnight and the texture was the same as before it went it the fridge so no need to refrigerate. I didn't like how the dough texture was crumbly. It was hard to roll into logs because the dough doesn't stick together nicely. Instead of adding the almonds to the mixture, maybe just roll the cookies in the ground almonds before baking. I've bad better almond cookies than this. My teenagers loved it.

Popularity Cookies

These were just OK. I thought it was too much chocolate on top and too much butter in the recipe. I did bring it to work and my coworker loved it but for me it's a 3-star recipe. I used graham crackers because that's what I had and as I was cutting the finished cookies, the graham cracker fell off some of the pieces. I used cinnamon graham crackers so maybe that's why it fell off, because the graham crackers have a sugar topping that maybe the butter sugar mixture couldn't adhere to. I suggest applying the butter sugar mixture to the back side of the graham crackers if that's what you are using. Still, I prefer almond roca candy to this. I don't think I'll make this again. It's in the refrigerator and no one is touching it. If it were a 5-star recipe, it wouldn't last 2 days in my house.

Cauliflower Side Dish

I thought this was very good. I used chopped onions and I added a tablespoon of olive oil to the mix. It wasn't dry at all. Excellent. My husband and my two teens said it's one of the best ways they've eaten cauliflower. Thanks.

Melt-in-Your-Mouth Broiled Salmon

I omitted the last two ingredients which are herbs and dill. I didn't have white wine so substituted with rice wine. It came out delicious. After all the turning, my salmon didn't hold the shape it was when I started but nobody cared bec the food was good. I tried this for the first tiime and my family didn't miss our previous favorite salmon recipe. Now we have two favorites. Thanks for the recipe.
