Chef John's Mushroom Gravy

I have made this a few times now and this time I changed it up a bit. This gravy is spectacular the way it is but I had pork that I wanted to cook. My mom used to use cream of mushroom soup and take pork chops and fry them then cover them with the soup and simmer til they were tender. Well I don't like using the soup because of the sodium and preservatives. So I decided to cut my pork roast into chops, season with salt and pepper and pan fry with some olive oil and butter. In another pan I decided to make this gravy. I sauteed some onion til clear, added my mushrooms and a couple of cloves of minced garlic. Waited till the liquid evaporated and followed the directions for the gravy. When my pork "chops" were browned, I cut them up in smaller pieces and added them to my gravy. I also added some fresh thyme and a couple of fresh sage leaves chopped. I simmered the pork in the mushroom gravy till it was super tender. I also added a few glugs (industry term) of white wine to the gravy. While all that was happening I boiled up some egg noodles. We spooned the pork mixture over the noodles and magic happened, it was completely silent. Everyone loved the dinner, Thanks Chef John for a perfect recipe to also make it my own.

Chef John's Italian Meatballs

Only but the best from Chef John. These are the best meatballs I have ever tasted. Made them tonite for dinner and everyone devoured them! I made them for meatball subs but they were so good by themselves it didn't matter. Easy to make, I teamed with with a kale salad and it was a perfect dinner! Thank you again Chef John for an outstanding recipe!! :)

Glazed Beef Loaf

This is the best meatloaf I have ever eaten!!! Even if you don't like meatloaf you need to make this, you won't be disappointed. I made this exactly as the recipe stated except for I doubled the glaze. This was so moist and flavorful, I made baked potatoes and a green salad. This is the best please try this. Thanks for a superb recipe!!!

Mushroom Stuffing

This stuffing is wonderful, I too added portabella mushrooms and used a lot more chicken broth than stated. I turned out very moist and flavorful. I also melted a stick of butter and mixed in. Everything is better with butter and its a special occasion so I figured what the heck!! My daughter can't keep her hands off of it!! Thanks so much.

Cheesy Chicken and Rice

I made this for dinner tonite and I put my own twist to it. I sauted finely chopped onions and garlic and added to the chicken browning in pan. I substituted chicken broth and a few splashes of dry white wine for the water. I used different veggies cuz I have some that don't like broccoli. I used corn, peas and fresh mushrooms. This was absolutely fantastic!! Thanks so much!!

Creamy Rice, Chicken and Spinach Dinner

This was soo good. I was a little leery about using bottled salad dressing, I have tried before with horrendous outcomes. Everything turned out really good and so simple to make. I did add mushroom, onions and garlic which I sauteed together and then followed the recipe. Yummy :)

Arkansas Green Beans

This was beyond awesome!! I am not a fan of canned green beans but my son and husband love them. So that's why I tried this. This is a huge hit in my home. If I go to a party, I am requested to make these. TRY 'EM YOU'LL LOVE 'EM!!!

Chef John's Chicken Kiev

I would give this 10 stars. Delicious doesn't even begin to describe how this tastes. I do have to admit I did change 1 thing, I ground up my chicken in my food processor. When ever I pound out chicken breasts and try to fill them, I always lose the filling no matter what I do. Ground chicken was much easy to work with. The only bad thing was that the meat was sticky so I was wetting my hands a lot. The taste was exquisite, the absolute best I have ever had. The butter, garlic and parsley combo is perfect and the pinch of cayenne just brings it over the top. I didn't think the prep was really that bad, I think it was well worth it!!! Thanks Chef John :)

Brandied Candied Sweet Potatoes

Hamburger Soup

This was really delicious. My kids weren't sure about it but when they ate it they loved it. What's really great about this recipe is you have the freedom to add whatever you like. My mom used to make this when I was a kid. Everyone should really try this be creative and have fun this recipe can handle it!!!

Rock's T-Bone Steaks

I used this on t bones that my family made for mother's day. it was phenomenal. they were grilled on a charcoal grill and were perfect. you really need to try this one. i didn't measure it, i just eyeballed it and it came out really great. thanks so much

How to Make Homemade Pizza Sauce

Once again Chef John another excellent recipe!! Very easy to make and the taste is the best. I agree you need to use the 2 oregano's that's where most of your flavor comes from. I will try to find San Marzano tomatoes next time though, my sauce was kind of watery even though it cooked for almost two hours. My boo-boo. I think everybody should try this you won't be disappointed. My hubby and kids want homemade pizzas every week now!! :)

Herbed Dumplings

These were some of the best dumplings I have ever tasted. I love the herbs and they were so easy to make. My daughter who hates anything doughy asked if I could make them every night. They are very light and fluffy and so very flavorful. Try them with your next stew you will love 'em!

Grilled Coffee and Cola Skirt Steak

Holy Cow!!!! No pun intended!! Where to start, this is beyond yummy. I'm glad I watched the video before I grilled the steak and it was beyond delicious!! I also reduced the marinade and put over the steaks when they were finished. I have to admit that I was a bit skeptical with the combination of the ingredients in the marinade but this is the best I have ever eaten. I made baked potatoes and steamed cauliflower broccoli combo. It was a perfect Sunday dinner. I bow to you sir!!! :)

Hearty Pasta Tomato Soup

OMG!! Everyone in my family loves it! I too substituted celery for the green pepper we don't care for it. There were no leftovers and my son asked if I could make this again tomorrow!! This is such a healthy and flavorful soup. Thanks so much for a wonderful recipe!!

Cathy's Creamy Chicken Bake

Fantastic recipe but I did do a couple of things to make it my own. I partially sauteed the chicken breasts in a bit of olive oil and seasoned them with salt and pepper. I also diced an onion and some celery which I also soften in the frying pan with a bit of olive oil. I added the onion and celery mixture to my sauce in the bowl. I didn't use swiss due to the fact I am the only one that likes it, instead I used a shredded italian cheese blend. To my sauce I also added some savory which really made it yummy. I made stuffing for a side dish and had some green beans. Talk about comfort food, this is it!!!
