Grilled Coffee and Cola Skirt Steak

Reviewed: Mar. 23, 2014
Holy Cow!!!! No pun intended!! Where to start, this is beyond yummy. I'm glad I watched the video before I grilled the steak and it was beyond delicious!! I also reduced the marinade and put over the steaks when they were finished. I have to admit that I was a bit skeptical with the combination of the ingredients in the marinade but this is the best I have ever eaten. I made baked potatoes and steamed cauliflower broccoli combo. It was a perfect Sunday dinner. I bow to you sir!!! :)

Sweet and Sour Meatballs in Sauce

Reviewed: Nov. 3, 2011
Holy cow these are a huge hit in my house!! The only thing I did different was I browned the meatballs in a frying pan with a bit of olive oil. It was very easy to make and I tripled the recipe!! Had everyone over for dinner. I had sauteed spinach on the side for a complete dinner. Yummmm!

Creamy Tomato Chicken

Reviewed: Nov. 4, 2010
I thought it was really good the only thing is it was a little too tomatoey. I added more cream and a little vodka to the sauce to thin out, seasoned it with salt, pepper and some italian seasoning. I placed the chicken breasts (i made enough for 8) in a baking dish sprayed with cooking spray in a 350 oven for 25 min. I placed the shredded mozzarella on top and baked until melted. To me it was like a mock chicken parmesan without the breading. I served the chicken with some italian herbed rice that I made and a salad.

Chef John's Chicken French

Reviewed: May 31, 2014
Yay, I am the first to rate this!!! This was really elegant and extremely tasty. It is the easiest thing to make and everyone raved about it. I followed the recipe to a "T" and it was wonderful. I also watched the video which Chef lets you know a few different things you can use in place of some of the ingredients. I used sherry and it was delicious. I also made this for a family get together so I quadrupled the recipe without any problems and like I said it is so easy to make. I also made a beet salad with this and had some white wine. And as always Chef John, perfect. Thanks again :)

How to Make Homemade Pizza Sauce

Reviewed: Apr. 6, 2014
Once again Chef John another excellent recipe!! Very easy to make and the taste is the best. I agree you need to use the 2 oregano's that's where most of your flavor comes from. I will try to find San Marzano tomatoes next time though, my sauce was kind of watery even though it cooked for almost two hours. My boo-boo. I think everybody should try this you won't be disappointed. My hubby and kids want homemade pizzas every week now!! :)

Ground Beef Curly Noodle

Reviewed: Jan. 24, 2012
I made this tonite for dinner. This serves 4 but I had to punch it up to serve 15. Shockingly it wasn't bad. I used the beef noodles, no oriental. I used some beef stock, also I added a little bit of better than bouillon beef to punch up the beef flavor. I also added black pepper and a bit of sugar to off set the tomatoes. Very very yummy!!!

Pork Carnitas

Reviewed: Aug. 2, 2014
I made this and it was spectacular. I eyed the amounts and also by taste. I was skeptical about it crisping in the oven but it did!! I had wonderful carnitas, moist on the inside and crispy outside. I made some pico de gallo and warmed up some corn tortillas, it was perfect. The seasoning is perfect I didn't change or add anything. Huge hit for my family and even my 3 yr old granddaughter loved them. Thanks for a wonderful recipe!! :-)

Cheesy Chicken and Rice

I made this for dinner tonite and I put my own twist to it. I sauted finely chopped onions and garlic and added to the chicken browning in pan. I substituted chicken broth and a few splashes of dry white wine for the water. I used different veggies cuz I have some that don't like broccoli. I used corn, peas and fresh mushrooms. This was absolutely fantastic!! Thanks so much!!

Au Gratin Beef Bake

Reviewed: Mar. 30, 2011
I agree this is a wonderful starter recipe, I added chunky salsa, season salt, cajun season, and mexican cheese as did another reviewer. It was wonderful! I think you could go in another direction as far as adding some red wine and tomato paste or even a can of tomatoes. Thanks so much for another winner!!!

Paprika Chicken with Mushrooms

Reviewed: Jun. 16, 2014
This is the second time I have made this. The first time I followed the recipe but to me it was a bit bland and needed a punch. This time I used 2 cloves of garlic minced, 2 shallots minced, half an onion cut up, I also put flour in a zip bag and seasoned it with smoked paprika, salt and pepper. I dredged my chicken in the flour and browned in some butter and olive oil. I put the chicken in a baking pan once they were browned and put my shallot, onion and garlic in the pan with a bit more butter till soften, added my mushrooms and let it cook down. Then when the mixture was cooked down I sprinkled about 3 tablespoons of my seasoned flour over the mixture and cooked it a couple of minutes. I added a half of a cup of dry white wine and let reduce. Then I added approximately 2 cups of chicken broth until it was thickened and added 2 teaspoons of fresh thyme and poured over my chicken. I placed it in a 350 degree oven for about 30 minutes. I covered the baking pan with foil. It was delicious. My family loved the new rendition. Thanks for a great starter recipe that you can make to your own tastes.

Chef John's Penne with Vodka Sauce

Reviewed: Jun. 9, 2014
Yay, I get to be the first again to rate another one of Chef John's masterpieces. This was outstanding!! I quadrupled this partly because we had company and the other part is we all love pasta! This was so very easy to make and using the bacon really made it stand out. I never would have thought about putting bacon in this sauce but it really adds a richness that I have never had in a vodka sauce. I made a dandelion green salad and had some garlic bread. It was so tasty and everyone was eating and so quiet that you could here a penne drop, lol!! Thanks again, Chef John :)

Country-Style Ribs

Reviewed: Jan. 24, 2012
I made this the other nite for dinner and I followed the advise of another reviewer. I used balsamic vinegar in place of cider and I used liquid smoke in place of worcestershire sauce. I found that it was still pretty sour due to the ketchup and vinegar. I added about a quarter cup of dark brown sugar and approx. one teaspoon of ground ginger. Once the ribs were done, I removed them to a platter and I reduced the sauce. I also made a slurry to help thicken and it turned out really awesome!! Thanks for a great recipe

Mushroom Stuffing

Reviewed: Nov. 23, 2011
This stuffing is wonderful, I too added portabella mushrooms and used a lot more chicken broth than stated. I turned out very moist and flavorful. I also melted a stick of butter and mixed in. Everything is better with butter and its a special occasion so I figured what the heck!! My daughter can't keep her hands off of it!! Thanks so much.

These were some of the best dumplings I have ever tasted. I love the herbs and they were so easy to make. My daughter who hates anything doughy asked if I could make them every night. They are very light and fluffy and so very flavorful. Try them with your next stew you will love 'em!
