Creole Chicken I

Reviewed: Oct. 2, 2010
This was awesome! I too made changes, used a couple of cubanelle peppers instead of green, used a sweet onion,4 cloves of garlic(minced),bay leaf, coriander, cumin, ground chipotle pepper and cajun season. I did use the ham and hot italian sausage, that i browned, i also used chicken leg quarters, added frozen shrimp in the last hour.Made rice on the side but used chicken broth instead of water and put some of the cajun spice in there as well. I also used more hot sauce. Believe me the prep is well worth the results! Thanks for an awesome recipe Nancy!!!

Creamy Tomato Chicken

Reviewed: Nov. 4, 2010
I thought it was really good the only thing is it was a little too tomatoey. I added more cream and a little vodka to the sauce to thin out, seasoned it with salt, pepper and some italian seasoning. I placed the chicken breasts (i made enough for 8) in a baking dish sprayed with cooking spray in a 350 oven for 25 min. I placed the shredded mozzarella on top and baked until melted. To me it was like a mock chicken parmesan without the breading. I served the chicken with some italian herbed rice that I made and a salad.

Au Gratin Beef Bake

Reviewed: Mar. 30, 2011
I agree this is a wonderful starter recipe, I added chunky salsa, season salt, cajun season, and mexican cheese as did another reviewer. It was wonderful! I think you could go in another direction as far as adding some red wine and tomato paste or even a can of tomatoes. Thanks so much for another winner!!!

Braised Balsamic Chicken

Reviewed: Jul. 29, 2011
Holy cow this is fantastic!! Made it last nite and no leftovers! I used bone-in, skin on chicken breasts, seared them in a skillet w/evoo and thru them in the slow cooker. I used the onion, fresh garlic and some fresh mushrooms and caramelized all then added to the chicken. I used italian seasoning and poured the tomatoes over. I let it cook on high, was able to remove the bones and skin, made some garlic mashed taters and green beans it was so yummy. I think next time I will use cremini mushrooms for even a deeper flavor, oh, I also added a smidgen of dark brown sugar which really brought out the balsamic flavor without adding more vinegar! So easy to make and so yummy to eat definitely a keeper, Thank you so much!!

Honey Curried Roasted Chicken and Vegetables

Reviewed: Aug. 25, 2011
I made this basically according to recipe, I did however do as others who have reviewed this, doubled the sauce. I also brined my chicken the day before I cooked it. I decided to use just one apple and i cored it and quartered it and placed it in the chicken cavity, it kept it moist and gave it a great flavor. I seasoned my chicken with salt, pepper and garlic powder under the skin and on top as well. I also roasted my vegies at 400 degrees for 15 minutes before hand and then roasted my chicken separately in a 400 degree oven for 30 min then lowered the temp to 350. I put the sauce on the chicken in the last 10 min of cooking and then took out chicken covered in foil to rest. I popped the vegies back in the oven at 400 degrees to finish and also slathered sauce on them. Every one loved this. I also think that this would be excellent with pork.

Four Cheese Macaroni Casserole

Reviewed: Sep. 9, 2011
I made this tonite for dinner and changed a couple of things. I wanted to make this a complete meal so I browned 2-3 lbs of ground beef and drained, then sauteed some sweet onion and garlic in olive oil and added diced tomatoes along with the seasonings to the garlic onion mixture and heated that thru. I added the cheese to the hot pasta but also added an 8oz brick of soften cream cheese to combat dryness and make it richer. Paired this dish with an arugula salad and dijon vinegarette, crusty bread and this was one awesome meal!!! Thanks so much

Cathy's Creamy Chicken Bake

Reviewed: Oct. 27, 2011
Fantastic recipe but I did do a couple of things to make it my own. I partially sauteed the chicken breasts in a bit of olive oil and seasoned them with salt and pepper. I also diced an onion and some celery which I also soften in the frying pan with a bit of olive oil. I added the onion and celery mixture to my sauce in the bowl. I didn't use swiss due to the fact I am the only one that likes it, instead I used a shredded italian cheese blend. To my sauce I also added some savory which really made it yummy. I made stuffing for a side dish and had some green beans. Talk about comfort food, this is it!!!

Cheesy Chicken and Rice

Reviewed: Jan. 13, 2012
I made this for dinner tonite and I put my own twist to it. I sauted finely chopped onions and garlic and added to the chicken browning in pan. I substituted chicken broth and a few splashes of dry white wine for the water. I used different veggies cuz I have some that don't like broccoli. I used corn, peas and fresh mushrooms. This was absolutely fantastic!! Thanks so much!!

Country-Style Ribs

Reviewed: Jan. 24, 2012
I made this the other nite for dinner and I followed the advise of another reviewer. I used balsamic vinegar in place of cider and I used liquid smoke in place of worcestershire sauce. I found that it was still pretty sour due to the ketchup and vinegar. I added about a quarter cup of dark brown sugar and approx. one teaspoon of ground ginger. Once the ribs were done, I removed them to a platter and I reduced the sauce. I also made a slurry to help thicken and it turned out really awesome!! Thanks for a great recipe
