Chicken Souvlaki with Tzatziki Sauce
This is really delicious, I let my chicken marinate overnight. I made changes to the sauce: After shredding the cucumber I salted it lightly and then squeezed out the extra moisture through a few coffee filters. I also used lime juice instead of the vinegar, doubled the garlic and added fresh cilantro.

Quick Yeast Rolls
My house must be chilly, it took 2.5 hours from start to plate. I am glad I read the reviews/warnings about how sticky this dough is and to give it a chance (you can NOT handle it with your hands it is way too sticky for that, use a spoon sprayed with cooking oil). The only subs I made were using Butter Flavor Crisco and honey instead of sugar. The recipe made 12 rolls for me (for WW followers they were 3 points each) and they were melt in your mouth delicious.

Caramel Popcorn
I followed others advice. Make sure you use a wooden spoon, metal will get too hot and sugar will melt plastic. I reduced butter to 1 stick (make sure you use real butter NOT margarine or spread). Took brown sugar down to 1 1/4 cup. I popped the popcorn in clarified butter (3/4 cup unpopped) on stove to give a richer nuttier flavor. Weed out the unpopped kernels and keep the popcorn warm in oven and spray whatever you are mixing popcorn/caramel in with non-stick cooking spray. I lined cookie sheets with parchment paper. Make sure you raise your oven racks a little higher and stir every 15 minutes or the caramel will get too dark and burnt taste. I only cooked for 45 minutes and cracked some sea salt over cooling popcorn to balance the sweet. Clean up was easy and the popcorn was delicious!
