Tuna Noodle Casserole II

Not a bad tuna casserole. I used yellow cheddar and added frozen peas. My onions were undercooked and a little overpowering. If I make this again I will omit the onion and add a few less noodles.

Fiesta Stuffed Turkey Burgers

I had enough mix for five large burgers. They came out very moist, but even though I omitted the green onion and cut the amounts of cayenne pepper and cumin in half, these burgers were way too spicy for my husband and I. Grab the Tums!! If I make them again I will OMIT the cayenne pepper and cumin and forget the green onions.

Seafood Stuffed Zucchini

Very good recipe when you've got too many zicchini in the fridge. The only change I would make is cut the amount of garlic and oregano in half. All the spices kind of overwhelmed the seafood.

Seafood Enchiladas

I recommend really stuffing the tortillas. The sauce does cook all the way down, so I am glad I had extra sour cream, lettuce, tomato and salsa to top. Delicious!

Venison Mostaccioli Casserole

We have a freezer full of venison, so I am always looking for new ideas. I used 12 ounces of wheat penne and 1 1/2 cans of tomato sauce. Even though I used less pasta/more sauce it was still a little dry.

Chicken Pot Pie III

My husband took a bite and asked what the overwhelming spice was. The recipe had called for 1 tsp Thyme. I used only 1/2 tsp, and it was still too much. This recipe is a good comfort food that I will make again, this time with only 1/4 tsp of Thyme.

Kelsey's Favorite Stuffed Green Peppers

I made these for Christmas Eve. They were a big hit. I did use 4 large green peppers (there was a lot of rice mixture) and bought an extra can of tomato sauce (for dipping). I will make these again very soon!!

Hot 'n' Spicy Buffalo Chicken Salad

Delicious. My husband usually orders Buffalo Chicken Salad when we eat out, but is usually disappointed. Most salads are over-breaded chicken pieces covered in wing sauce on a bed of greens covered in ranch. This is the salad he's been looking for !!! Don't add extra dressing or spice/sauce and don't cut the amount of romaine. The flavor was perfect and the romaine really shrinks when you add the warm chicken. YUM!!

No Frying Eggplant Parmesan

This was my first attempt at eggplant parmesan. The eggplant tasted very yummy, but the recipe needed AT LEAST another jar of sauce. The sauce cooked down and the dish was dry. I will try this dish again using more sauce and a different kind (my family did not care for the Ragu Robusto, a bit too heavy tasting).
