Bermuda Spinach Salad

White Chocolate Fruit Tart

Recipe was perfect as is! A springform pan worked great. I also used a pie dish because I made more than one, and recommend spraying a pie dish with non-stick cooking spray first. This was good with or without the glaze.

Tina's Halloween Quesadillas

These were very good! Everyone, including the kids, loved them. I followed others' advice and added sauteed onion and cumin to the mashed sweet potato. I also simplified the assembly-I put the tortilla in the pan and added a thin layer of cheese. When it melted, I layered on the sweet potato, beans, more cheese, and another tortilla. By then the bottom tortilla was almost golden and ready to be flipped over. I initially stacked the quesadillas to keep warm, but the ones on the bottom lost their crispiness, so I recommend laying them separately on cookie sheets until serving.

Coconut Ice Cream

Perfect and so creamy! The cream of coconut will start to solidify when combined with the cold milk and heavy cream, so start with the cream of coconut and add the milk and cream slowly. I used the kitchenaid ice cream attachment and the recipe fit perfectly in it.

Amazing Butternut Squash

Very good, but savory-not sweet. Used 1/4 c mayo and onions, and doubled the topping. Used ritz instead of saltines. Makes about 6 servings. Add more brown sugar.

Guinness® Corned Beef

Excellent. I made one this way and another the traditional way, and everyone preferred this one. Cooked on low in a crock pot and it came out very tender. I also used the spice packet. Next time I will cook the cabbage, carrots, and potatoes separately - the ones cooked with the beer were too sweet. I can't stand Guinness beer, but couldn't taste it at all in the beef - it just had a very good taste which we didn't think was too sweet at all. This will be our corned beef recipe from now on!
