Sausage, Potato, and Chard Soup

Potatoes! This is a fantastic soup, I found this recipe while looking for something to make with some red chard. I happened to have some leftover sweet italian sausage, half a red pepper, and half an onion all on hand, so it was a perfect fit. And wow did we enjoy it! The next day, I diced up a leftover baked potato and added that to our leftover soup, and my husband described it now as even more perfect. Thank you for this recipe!

Mellow Pulled Pork

Outstanding. I omitted the cayenne and hot sauce because my son doesn't care for anything too spicy, and I knew my husband would douse his serving with hot sauce regardless. I also only added 1/2 cup of water, but still had plenty for the slow cooker. I was a little concerned when it first started cooking, the vinegar scent was strong, but it mellowed throughout the day, and mmmmmm, the end result was delicious. I would recommend this recipe for families like ours with varied tastes, it is a good, tasty meat and people can add more hot sauce or barbeque sauce to their own servings.

The Best Parmesan Chicken Bake

My family loves chicken parm, but I certainly do not love the work of breading and cooking the cutlets. When we want a quick version for a weeknight dinner, I've been making just chicken baked with sauce and cheese. So tonight I decided to try this version, and everyone gave it an enthusiastic thumbs up. I used garlic and cheese croutons, just the store brand. It is true that after they bake and soak up some sauce, you can cut up your piece of chicken, and take a forkful of chicken plus some of the baked croutons, and you get a flavor of breaded chicken parm. So this simple addition to my quick meal worked out very well for us. I didn't give it the full 5 stars only because it really isn't "the real deal", and there was some unevenness in the outcome of my crouton layer - some had taken up sauce and were tasty, but others hadn't really gotten any sauce. So to get the desired flavor you need to cut up and stir things around to mix the chicken, sauce and croutons together. We'll definitely make this again, and maybe with some repeat experience with it, I'll get more consistent texture throughout.

Cranberry Glop

Made this for Thanksgiving this year, because traditional cranberry sauce is not much of a hit with my family. Everyone enjoyed this, and even the leftovers disappeared quickly. Was not too tart, not too sweet. And it still worked in turky/stuffing/cranberry sandwiches next day. So, I think this recipe is a keeper.

Tony's Summer Pasta

First of all, can't beat how easy and quick this is. After reading the reviews, I decided that I wanted to pre-warm the tomato mixture a bit so that it did not cool down the pasta too much. So rather than setting up the tomatoes, basil, etc in a bowl, I put it all in a pan, set on an extremly low simmer. More importantly for a recipe review - the taste. My son who is not usually a fan of anything with fresh tomatoes commented on how tasty the combination is. I had not doubted that all along - fresh tomato and basil is heaven to me - but the fact that it won him over was definitely a breakthrough. My husband commented that he would be happy to have pasta this way all year round.

Baked Chicken Wings

I made a big triple batch of these to take to a pot luck gathering. They were a huge hit and several people requested the recipe. Perfect for a pot luck because they are not too spicy, not too saucy, and can be prepped ahead of time. The event we were going to was a soccer game/lunch, so I put everything into a bag the night before, so the wings had a chance to marinate overnight. (I had been thawing then in the fridge all day before that, so they were still partly frozen and finished thawing during this overnight marinate). In the morning I dumped them all onto trays, baked them according to the recipe, and then transferred to my crockpot for the potluck, was able to use keep warm setting and since they had gone it hot, this was just right to keep them warm for serving.

Savory Pumpkin Hummus

Made this to take to Thanksgiving, followed the recipe with the adjustments RedHedd had posted in a review/comment. It was a big hit. The pumpkin taste is not at all overpowering, and the seasoning was flavorful without being too spicy. My husband and daughter are big hummus fans, and definitely gave thumbs up to this recipe. It was our first time making our own hummus, and it came out perfectly. We will definitely make this again.

Classic Spanish Sangria

Easy and delicious! I only used about half the amount of rum, and for the wine I found a merlot/zinfandel blend which I thought worked out just fine. Will definitely be making this again.

Beef Tenderloin Asturias

I wanted to make this sauce, but for beef cooked on the grill. So, rather than starting with beef in the pan, I melted a little butter and beef base, then used that to cook the onions and start the sauce. Other than that, followed recipe pretty much exactly as written here. It was really very good! I should also mention that I did not have time to seek out special variety of blue cheese, I used grocery store variety and it worked well enough. I would love to try again with even better cheese.

Cheddar Beef Enchiladas

The author's description mentioned picky eaters, and this recipe was a hit with my picky eaters too. I personally prefer a much spicier and complex kind of dish, but for the kids, this was just right. Only change I made, out of necessity because I did not have any cream soup on hand, was that I combined the salsa with some of the refried beans to make a smooth spread to go on the top.

Slow Cooker Pizza Pasta

Also made this as a regular dish, not in slow cooker. Browned the meats in a pan, added the sauce to heat through. Put the sauce onto the pasta and added the mozzarella.

Pizza On The Grill I

HUGE hit, and we had great success on our first try. We used prepared dough from the store, and divided each one in half so that we could all make our own individual pizzas. I grilled veggies, chicken, and shrimp first, then when we had all the toppings ready we started making our pizzas. Definitely the closest you can come to a brick oven flavor/texture at home. We took the crusts off the grill to add the toppings, safer for the kids, so needed a bit of corn meal on the platter to help with sliding them back onto the grill.
