Baked Chicken and Onions

Marinade the chicken in lemon juice, pepper, and salt for at least 2 hours ahead of time, and it will be much more flavorful. Gallon size ziploc bags are great for marinading meat.

Garlic Mashed Potatoes

For richer potatos, increase butter to 1/2 cup, use half 'n half instead of milk, or use milk, but add 1/4 cup of sour cream. ALWAYS melt & mix butter in potatoes first, as this will coat them, and prevent the release of starches that makes mashed potatos goopy sometimes.

Peanut Noodles

I made this recipe for 30. I used, proportionally, four times as much ginger as recommended, and an an almost equal amount of garlic. Instead if crushed red peppers, I sauteed thai chilis with the garlic and ginger. I used red wine vinegar instead of cider. It was a crowd (and I do mean crowd!) pleaser. I often make this when I have to feed a large group now. Sesame or peanut oil both work great with this, but olive oil does just fine in a pinch.

Hot Peanut Sauce

Be sure to use organic peanut butter. This recipe can be greatly improved by adding ground cumin, ground ginger, and increasing the amount of cayenne (although ground dried thai chilis are much better). An entirely different recipe would sautee minced thai chili, minced ginger and combine the other ingredients (plus a little more peanut butter) over low heat until melded.

Apple Pork Chop Skillet

Marinade pork chops in 4 parts apple juice to 1 part soy sauce for at least half an hour before browning - will avoid blandness.
