Grilled Fish Tacos with Chipotle-Lime Dressing

Loved this!! I hate to cook and was thrilled with how well this turned out. And it wasn't difficult to make! My changes were few: cod; baked the fish; no adobo sauce. Served it with cabbage, tomatoes, cheese, avocado, jalapenos, and cilantro. My entire family enjoyed it! I taste-tested the sauce with a chip and was tempted to just keep eating it that way!

Hoisin-Glazed Salmon

I heard two "yum"s after the first bite! Wonderful flavor, not too spicy and not at all two sweet. I used "Rooster Sauce" for the chili sauce and powdered ginger. Other than that followed the glace recipe. We finally had nice weather so grilled instead of baked. Very very good and made a great leftover the next day! Served it with rice and steamed veggies. Will make this again!

Blackberry Cobbler II

Absolutely wonderful! Only thing I did differently (aside from needing to make a baking powder substitution...) was to add some cinnamon to the dough. My 9 year old said "I don't like warm fruit but I *love* this!!" We will definitely make this again--probably a few more times this blackberry season!

Salmon Broccoli Bake

My family (children especially) really loved this. I used leftover grilled salmon instead of canned. Non-fat plain yogurt instead of mayo. Otherwise followed the recipe pretty close and was happy with the results!

Turkey Shepherd's Pie

Great basic recipe idea for me to work from. Wasn't able to follow it exactly but used the layering suggestions and cook temp/time to get something started. No stuffing. No gravy. Used leftover corn as the vegetable. Mixed the leftover mashed potatoes with a can of Cream of (whatever...wanted Chicken but only had Celery) soup. I think this meal of leftovers was better than the original dinner!

2-Step Inside-Out Chicken Pot Pie

Loved how easy this recipe is!! I doubled everything to make sure I had plenty. I cooked the chicken with garlic, pepper, Johnny's Seasoning Salt, and Italian seasoning. I added ~1 cup of chicken broth to the mix because I was afraid the condensed soup alone might be too sticky/thick. Was a hit with everyone who ate it.

Chickpea Curry

Very good and simple to make but SPICY! Next time I will halve the cayenne. It's deceiving though... it doesn't smell spicy while cooking. My youngest doesn't like spicy food but ate it well by adding a spoonful of sour cream. I mixed my leftovers well with rice and that helped the next day (either didn't have enough rice with it the night before or didn't mix it well enough). Loved the flavor and ease of preparation. Will probably make it again since I have enough of bulk purchased seasoning left over.

Italian Meat and Spinach Pie

Delicious! (so say husband, kids, and adult friend) I doubled the recipe. No mushrooms or olives (I'm the only one who likes them) and no peppers (I hate them) but substituted zucchini in with the meat and tomato sauce. Pretty much followed everything else. It was good--but I'll probably stick with regular lasagna. Fun to make a change though!

Summer Squash Puffs

I know they aren't healthy... but they are yummy!! A little bit bland---I'm thinking of adding jalepenos next time! Still a good flavor and a big hit with my family. My oldest daughter has already set some aside to have in her lunch tomorrow.

Yummy Cube Steaks

Very good! I considered trying it in the slow cooker, but decided to stick with the listed cooking method. Glad I did because my husband said it was one of the best cube steak dishes I've made. The meat was tender, flavor just right, a little saucy, but I like sauce (too bad I didn't serve it with rice!). I'll make this again (lots of cubed steak in the freezer!), but may try the slower cooker next time now that I've tried the proper way.

King Ranch Chicken Casserole I

Easy to put together and the family enjoyed it. But, they were surprised it's wasn't spicy. I used boneless, skinless chicken breasts--cubed and cooked in a little oil and garlic and added cumin, chilli powder, and cayenne. No onion. Added a can of drained black beans. Combined the tomatoes and two "cream of" soups (one chicken & one celery) and maybe 3/4 cup of cheese. Added the soup/tomato/cheese mix to the chicken/beans and poured it over the tortilla chips. No layering. I'm assuming my husband added cheese to the top after it baked for 20 minutes... I used maybe 1 1/2 to 2 cups cheese total. Much faster to glop it all onto the chips rather than try layering it. So, is King Ranch a restaurant or brand or something?

Butter Whip Frosting

Very easy recipe (esp with AllRecipes ability to change the serving/ingredients). Taste was good (my girls love sweet!) but texture was a bit grainy. Great recipe if you are brand-new at making frosting and want to find out if it's do-able. Now that I've done this I can try other recipes--and/or play with this. If you need a simple frosting recipe that does not call for shortening, this is a good one to try.

Hunts® Tomato and Bacon Tortellini

Very easy to make, but the flavor was much too sweet for my family's taste. I've not cooked with cream cheese before and not sure what to substitute for next time. Maybe I'll try it again and just omit the cream cheese/cheese aspect entirely. Loved how easy to make though!!
