Garlic Tempeh Spaghetti

Good recipe as is. I like to add more sauce so I added 1/2 cup more. I felt like it needed veggies so I roasted some mini squash with olive oil, garlic, lemon juice,thyme & added it to pasta at end.

Strawberry Mint Chia Fresca

Nice and refreshing drink. Great way to use my chia seeds. The lemon/lime combination sweet but sour was tricky for me. I may have used more lemons which I thought would make it more sweet vs limes that are more sour/tart but all lemons are not the same I guess. Meyer lemons are sweeter not sure what I used. Mine came out more sour but still delicious! Will definitely make again maybe add kiwi.

Penne with Chicken and Asparagus

This was a light,healthy dish that my boyfriend and I enjoyed. I did make a few changes such as using fetuccini pasta instead and added mushrooms,small jar rof artichoke hearts, red peppper flakes and fresh lemon juice. My boyfriend suggested adding cherry tomatoes, olives and capers. Hmm...maybe I'll try that next time or just add sundried tomatoes. So many options but still great as is!

The Best Parmesan Chicken Bake

It was very easy to make and the butter/garlic croutons I used added a nice crunchy touch. I will add more sauce next time maybe 3 cups but the recipe as is was delicious provided you use thin chicken breasts. I used 5. I also cut back on the mozarella/parmesan cheese and served it on top of whole wheat spaghetti pasta with green beans and texas toast garlic bread on the side. It was plenty for a party of four!

Layered Chicken and Black Bean Enchilada Casserole

This was first time to use coriander/cumin and thought the flavor was just right if you're not a spicy person. I almost forgot the cilantro (love the smell) & put it in on the 2nd layer though after reading about cilantro (yes i googled it) it's best to wait til the end since it doesn't hold up to heat. I didn't have the right pan & used a 9X17 which left me with more sauce so next time I will use my 8x8 pan or larger tortillas. I served it with sweet corn bread which was a great side. Easy to make, great flavor, will definitely make again perhaps the traditional way versus mexican lasagna.
