Libby's® Famous Pumpkin Pie

Fabulous! I don't like pumpkin pie, but I couldn't stop eating the batter. I made it with sweetened condensed milk instead of evaporated milk, and it was light and creamy. However, this recipe change recquired and extra 10-20 minutes of baking at 350 degrees.

Grenadian Spice Cake

A tasty cake. I added a splash of honeyed whiskey to the mix, along with some fresh ginger. The lime flavor wasn't vert prominent. Next time I'd use more lime.

Heavenly Angel Food Cake

Delicous. It was a hit at my party. I did make a few changes. I found that I only needed about 8 egg whites to make a cup and a half, and I used a full teaspoon of almond extract.

Mrs. Sigg's Snickerdoodles

The best snickerdoodles I ever had. They were crisp on the outside and soft and buttery on the inside. Eight mintes cooked the perfectlly. The only thing I changed was using all butter instead of half shortening, and adding a teaspoon more cinnamon in the cookies.

Good texture, but too sweet. I reduced the amount of brown sugar, and added cooked mango with the sugar.

Ginger Rhubarb Crisp

An outstanding recipe! The combination of rhubarb and fresh ginger was a hit at my church's picnic. I garnished with strips of fresh ginger, so it looked as good as it tasted.

Tropical Lime Cake

An excellent recipe. Instead of making the glaze, I used cream cheese frosting, and it was a hit! However, if you make it in a glass pie pan, let it cool for about an hour before you try to remove it. My first attempt crumbled!
