Slow Cooker Chicken Stroganoff

I really wanted to like this recipe, but my version turned out awful and inedible. It doesn't taste at all like real stroganoff. It is extremely salty and the Italian dressing leaves a weird aftertaste. In addition, by cubing the chicken before cooking and putting it in with no liquid, after just a few hours (I gave it 3.5 hours) the chicken is tough and unpleasant (most slow cooker recipes work better by using frozen raw chicken breasts submerged in liquid and shredded right before eating). I do take some responsibility for changing the recipe--I like a lot of sauce, so I doubled the sauce ingredients (twice the cream cheese, twice the soup, a packet and a half of the seasoning) and added 3/4 of a cup of chicken broth to thin it a bit. The result was initially surprisingly bland (other than the overwhelming salt, and until the aftertaste hits you) and combined with the bad cooking of the chicken just inedible. My family and I ended up throwing out the whole pot and eating something else.

Melt-In-Your-Mouth Meat Loaf (turkey version)

I really wish we could rate the sauce and the meatloaf separately. The meatloaf is EXCELLENT. My extremely picky 5 year old and my meatloaf-hating husband both loved it, which was a miracle. Due to food preferences in our house, I made this with ground turkey instead of beef, added garlic powder, and omitted the mushrooms. I did end up having to add more bread crumbs because my mixture was too liquidy before it went into the pot. I made the glaze exactly as written, but doubled it according to other reviewer's suggestions. As I said, my whole family adored the meatloaf. I thought that the glaze was edible, but nothing special, and had a little too much of the mustard in it for my taste. Overall definitely something I would make again, this time without the glaze.

Slow Cooker Dump and Go Cheesy Chicken

Even my super-picky, never eats anything with sauce 5-year old loved this recipe--and she is the kind of kid who only wants to eat plain breaded chicken breasts cooked in the same way every night. I made a couple of minor changes based on other reviews--I used both cans of cream of cheddar, but I also put in a can of cream of chicken. I seasoned the chicken breasts with garlic and Italian seasoning, and I cooked on low for 7 hours. The chicken shredded a bit when I was cutting it up but actually the pieces that were covered in sauce were the best--the ones that had the inside of the chicken exposed with no sauce were pretty bland, so you want to make sure you have plenty of sauce. I served this with jasmine rice that I made with chicken broth instead of water.

Slow Cooker Beef Stew I

Full disclosure, I added more broth (3 10 oz cans) because I prefer soup-like soup, as well as a packet of McCormick's beef stew seasoning. Everything else I followed to the letter. That being said, even with the extra spices I found this to be pretty bland. The other reviews were right, this recipe lacks depth and layers. I'm not sure what could have fixed it (more herbs and spices maybe) but it definitely needs some tweaks. It is a good base to start with though if you're one of those cooks who can be creative in the kitchen.

Fast English Muffin Pizzas

This was a lot of fun for my 4-year old because she could put together her own and feel like she "cooked" her own dinner. I did follow the suggestions of the some of the other commentators and toasted the muffins first. For my daughter I followed the recipe as it was written (minus the pepperoni because she's not a fan). For mine, I subbed in fresh tomato slices for the canned sauce, and instead of pepperoni I added fresh garlic and some dried basil. SO GOOD. I personally think the fresh tomato version is a lot better than the canned sauce, but both were good and this recipe was definitely fast and easy like it promised.

Mini Frittatas

These are pretty good, although a little bland as written. I've made them exactly as the recipe calls for, and i have also sauteed green peppers and added those, and added some shredded cheddar cheese. I've also substituted turkey bacon for the sausage. The extra veggies and cheese was good, but the bacon actually isn't a good substitution, it doesn't have as much flavor in the final dish as the sausage.

Chicken Fettuccini Alfredo

This recipe was only ok. When I completed the sauce and tasted it with the chicken, it was great. However, once I put it on the noodles, it became very bland. I think it would have needed a lot more spice.

Slow Cooker Cilantro Lime Chicken

The amount of liquid in the slow cooker is only enough to create a thin layer on the bottom, with a ton of chicken on top, uncovered. In addition, the cooking time is way off--I used 4 frozen chicken breasts (much less than the 3 lbs called for in the recipe) cooked on low and after 4 hours it was cooked completely through and could be shredded by a fork. The recommended cooking time, combined with the lack of liquid, would have ruined the meat. I added 3 cups of chicken broth, an extra lime, and more cilantro. I cooked on low for 4 hours, then removed the chicken, shredded it with a fork, and put it back in for 30 more minutes. When it was done I strained the chicken out of the liquid and put it on tortillas with cheese and sour cream as tacos, which was very good. The crockpot dish itself looked like a soup before I strained it, however.

Slow-Cooker Chicken Tortilla Soup

I made this and even my super-picky, hates onions husband loved it! Like a few others I made a couple of changes. Instead of water I used a whole box of chicken broth. I also increased the tomatoes to 28 oz, used 4 frozen chicken breasts, and omitted the corn. I also used store-bought tortilla chips. It was delicious! Next time I might try adding in a few more veggies but it is definitely great as-is as well.

Taco Casserole

Lovedit, with a few minor alterations. I substituted ground turkey. Only added 3/4 the can of tomato soup, and I added 3/4 of a 16 oz. jar of mild salsa. I also added about 7 ounces of water. In addition, I mixed 4 oz. of Colby jack cheese into the meat and pasta mixture on the stove, as well as a small amount of fennel seeds and cumin. After pouring into the baking dish, I mixed the crushed chips with another 4 oz. of Colby jack and topped the dish with that.baked for 20 minutes, then turned on the boiler for one minute for extra crispness on top. Will probably try Fritos in place of tortilla chips next time.

Quick Quiche

So good! I used a couple more pieces of bacon, added garlic powder and omitted the onions. The middle won't rise as much as the outside, but that isn't a problem. Mine fell after it came out of the oven, but tasted great-even my super picky husband who usually hates quiche ate it!

Grilled Peanut Butter and Banana Sandwich

Not only was it delicious, but my EXTREMELY picky toddler loved it. Definitely something I'll make again! I made it exactly the way the recipe said to and it came out great. Probably would have been good made with butter instead of cooking spray as well.
