Baked Salmon II
I have been known as hating fish, but I have started making myself eat it as I know it is good for me. Using this recipe was my first at making a fish dish (my husband normally grills it). I have now made this a number of times and actually really enjoy it! My tweaks include: 3 gloves garlic, 4 T olive oil, 1tsp basil, no salt, 1tsp pepper, 2T lemon juice and 1/2 tsp parsley. Both my husband and kids love it and I make this almost every week! Thanks Ladyblade!:-)

Mostaccioli with Spinach and Feta
Great and flavorful with a few changes.:-) I added more garlic, basil, oregano, and red pepper flakes as suggested by some. Very simple and easy for a weekday meal and is a nice fresh change from spagetti sauce. Even my 2 1/2 yr old enjoyed it- thanks!

Chicken Cilantro
My husband stated "very tasty" surprisingly after taking a bite. We all liked it. I substituted 1 can chicken broth instead of the cube chicken bouillon and water, used brown rice, and corn instead of hominy. Thought it had good flavor, though would have definitely added some lime juice if I had had some on hand and maybe cayenne pepper next time around.
