Slow Cooker Butter Chicken

Great recipe and very easy for the slow cooker. I did not sauté my ingredients, I simply put everything in at once in typical slow cooker style. I did increase the spices at lease by 50% and some double. My milk and yogurt did not curdle. I cooked on high for 4 hours with fairly small pieces of chicken. Very yummy and will defiantly make again!

Slow Cooker Chicken Marrakesh

I made this really expecting something very flavorful and was a little let down. First things first, I used a food processor to cut my veggies so everything was cut evenly and cooked just right. I used a pound of thigh meat and a pound of breast which was a good mix as well. I also only have a 4qt. crockpot and had to take out some of the veggies because they wouldn't all fit. I thought the flavor was somewhat bland. Having said this, I will admit that I cook with cumin and turmeric a lot and also cook a lot of eastern-flavored dishes. If you are not used to these types of spices you would probably consider this very flavorful and a delight to your taste buds. I guess I was just looking for something more - so I doubled the spices! I also thought it needed something to bring all of the flavors together so I added some heavy whipping cream (about 1/4 - 1/2 c). I added all of this after the 4 hours and simply left it on warm for another two. It is a good dish and also very healthy (sans cream) and I think you could defiantly add more veggies to make it extra healthy. Just keep in mind how sensitive you are to the spices called for and use your best judgement for your tastes.

Oatmeal Butterscotch Cookies

This is the Nestle recipe except they now call for 1c. of butter. I always use the full cups (and I love butter) and get soft chewy, delicious cookies. I usually only bake half the batch and eat the dough right out of the refrigerator!

Enchiladas Suizas

Delicious recipe the only reason I didn't rate it 5 stars is because of the time. Base on the reviews I doubled the sauce expecting it to yield 8 smothered enchiladas, instead I ended up with double the smothered enchiladas which was fine because they are so yummy they wont last long. I slow roasted and pulled a pork loin a couple days before and kept it in the fridge until I was ready to make this. I did fry my tortillas and I dipped both sides in sauce. The only down side it the time...it took me almost an hour and a half for prep and 20 minutes to cook. I did all of my chopping and grating with a food processor. I will mention this was my first time hand rolling enchiladas, my mexican grandmother always taught me to make enchilada casserole because it is quicker, since she was a mother of 8 kids I can see where she is coming from! If you have the time this recipe is great!

Royal Icing

Adjust the sugar and lemon juice (or water) for your desired consistency. To 'flood' a cookie and get a smooth finish you would want the icing a little loose and I would probably start with 3 cups of sugar. If you beat our egg whites enough it will stiffen up quickly (any yolk will prevent egg whites from stiffening). Put cookies in the fridge or freezer to stiffen quicker if you plan on piping on decorations after the initial base of frosting. This recipe does need to be thicker, or of piping consistency, to pipe on more intricate decorations. This means almost as thick as creamy peanut butter (sorry that's the best thing I can think of to compare to). To achieve this consistency simply add more powder sugar.

Heavenly White Cake

I received mixed reviews on this recipe. Some people loved it and said it was the best they ever had and the other half thought it was just 'good'. I think the meringue really brings out a sweet almond flavor. I just wish it was a little lighter but I may have over beat it. I was looking for a very light and simple white cake recipe, although this was good, it wasn't exactly what I was looking for.

Baked Pork Chops I

This was really good and simple! I wasn't paying attention and thought the ingredients called for 'italian seasoning' so I added that to the 'italian' bread crumbs and it still turned out fantastic. I also used pork loin and only prepared two of them so I simply cut down the ingredient quantities. I hate doing extra dishes so I left my meat on a plate and hand-pat the flour on, dredged in the egg and then sprinkled and hand pat the bread crumbs on. This was quick and saved dirty dishes, I also used my toaster oven to bake them. The actual preparation time is minimal which makes it nice to throw together and then do something else for an hour while it bakes If you are not sure about the cooking time invest $3 on a meat thermometer, your food will be cooked to perfection every time. So easy and so good!

Slow Cooker Buffalo Chicken Sandwiches

Super easy. I used a bottle of wing sauce I found on sale at Target. I don't have a slow cooker so I simply do it the old fashion way - A pot on the stove on the lowest setting. It should take at least 3 hours for your meat to cook and when it shreds easily with a foor it is done! Time permitting, I like to leave my shredded meat on the stove a little while (maybe an hour) to soak up all the good marinade.

Banana and Vanilla Cupcakes with Buttercream Frosting

These are easy and delicious! My bananas were older so I mashed them instead of cutting them up. I also baked a Nilla Wafer in the center of each cupcake but the flavor of the cake still shines through. Mine baked in 15 minutes and came out perfect.

Spinach Basil Pesto

I made this without the cheese and used almonds because I was out of pine nuts. It was absolutely fabulous! I took it to a dinner party in a Pesto Quinoa salad (from allrecipes.com) and even though it was super easy everyone thought I was such a great cook.

Super delicious! I used the Spinach Basil Pesto recipe from allrecipes.com and added some prosciutto. I would have given it 5 stars but I altered it a bit, although I am sure it is delicious as-is. Easy too. Yummm
