Caramelized Apple Bites

Wow! Quick, easy, and delicious. Big hit at my house. (Because we like thicker, richer sauces, I added a couple more caramel pieces and a smigon of cinnamon to the preparation, but would still be terrific according to this recipe.)

Fruit Cocktail Cake with Sweet, Buttery Sauce

Wow! What a hit! Quick, easy, and delicious. My tips; 1) Do NOT use your Kitchen-Aid mixer (is doesn't chop up the fruit at all; 2) Add a few tablespoons of vegetable oil to the batter & mix well (ensures moisture); 3) Reduce the sauce recipe by half. This cake is going to be my Thanksgiving contribution this year.

Warm and Spicy Autumn Punch

Cornbread Muffins II

Fantastic recipe. I scaled the recipe amount to half, used an iron mold pan to make eight sticks, and it was PERFECT with vegetable soup. (One tip: If you use a heavy iron pan like I did, let them cool a couple of minutes before loosening with a butter knife.) Great taste, texture, and consistency. This one is definitely going in my notebook.

Garlic Cheese Biscuits

I had to practice a couple of times to get the baking temp and time just right for my tempramental oven (I call it Chernobyl), but once I hit upon the right combination, I was blown away with these tasty little jewels. Now if I can just find Red Lobster's stuffed mushroom appetizer recipe, I'll be all set.

Wedding Cake Icing

Awesome, awesome, awesome! I've used this recipe for a lot of different baked goods requiring icing. It has a fantastic texture, is very easy to work with, spreads out to a satiny smoothness with an offset spatula dipped in hot water, and can be very versatile with a few drops of your favorite extract added. Definitely a keeper!

Italian Wedding Cake

The cake itself has an excellent flavor, but the texture and consistency turned out a little too grainy. (I'm big on texture so I usually add a little (1/4 cup or less) light vegetable oil to most cake recipes to make sure it stays moist while I'm creaming butter and sugar. Maybe I shouldn't have.) The pineapple and coconut made the cake feel a little "lumpy" in my mouth too. But bascially, I thought it had a great flavor.

Margaret's Southern Chocolate Pie

Bullseye! This is a fantastic recipe. The chocolate and sweetness are perfectly balanced. Lumps have always been a major problem with my chocolate pies. Some tips I used to avoid unsightly lumpiness (which is inevitable with recipes like this) was to sift the dry ingredients together, stir the liquid mixture constantly and then strain out smaller lumps as it begins to thicken on the stove. The egg proteins will cause some lumps as they cook -- and espcially as you scrape the bottom of the sauce pan with the flat bottom spoon. Fortunately, they smooth right out after adding the butter with a little help from the handheld mixer. My end result was a perfectly firm, but creamy smooth texture and a delicious flavor. Thanks for submitting this recipe. Reminds me of Mom's chocolate pie.

Fourteen Layer Chocolate Cake

This delicious cake, when prepared correctly, will ruin any other chocolate cake for you. It seems to be primarily a "southern" thing though. (I'm southern, by the way.) And each cook ultimately has to adjust and tweek their recipe a little. I don't know exactly why, but the same recipe always turns out a little differently in each cook's kitchen. (Maybe that's a southern thing too.) At any rate, once you've had it done right, it's bound to become one of your all-time favorites. One tip I've learned is to make two smaller batches of icing/frosting. The icing between the layers is supposed to be a little on the soupy side allowing the thin cake layers to partially absorb it. The icing on the outside of the cake should be a little stiffer, but still not as thick as conventional icing. Neither icing should be "fluffy" in the versions I've savored in the past. It's labor-intensive and time-consuming, but oh-so-good once you've got the right recipe [for you].
