I made these last week. The only thing that isn't mentioned is that the dough itself uses NO SUGAR..so it is not a very sweet cookie. I personally perfer teh sugar version that gives just a Hint of sweetness..but my mom...RAVED about this dough..she doesn't have a sweet tooth like I do though... oh and I used black cherry allfruit spread w/ walnuts...and it was VERY good..I would add a tiny bit of sugar though..the filling was a bit tart..but good! I also added 2Tbs of milk because it was soo dry...worked great!

It just isn't Christmas without these cookies. They are the first ones on my list eveyr year... I've tried making them without the dates and although they are still good...something about the dates makes a big difference and they seem to stay moist longer.

White Chocolate and Cranberry Cookies

This recipe ROCKS! I used the vanilla instead of brandy, and added a tiny pinch of salt... when all was said and done I had a really hard time mixing it..it seemed very very dry..looked like ROLL cookies..so I added 1tblsp of milk and mixed then added the cranberries and white choc. It improved the texture and tasted GREAT! The funny thing is I used 2 diff cookie sheets..an Airbake and an reg old well seasoned one (prob older than I am)...the air baked cookies spread more and LOOKED more like the tollhouse choc chip cookie in size/shape...and the reg sheet stayed very rounded..like little mounds...I had one of each...the only difference in taste was the crispness of the edges of the one that spread...both were AWESOME! Definitely a staple at my house.. quick and easy...that's my motto!

Mexican Cream Cheese Rollups

this is a great base recipe. You can add a shake or two of garlic powder and some cilantro for a nice zesty taste and seven serve it as a dip for crackers (hearty ones...the ritz type crumble too easy.)).... NOTE: for ease in spreading microwave the cream cheese before adding ingred. for about 20-45 seconds.
