Roasted Rack of Lamb

This is delicious and I have made it about 3 times now, but all three times with different cuts of lamb. I used a lamb shoulder tonight, but really, this is a great way to prepare the lamb regardless of the type of lamb you are using. Instead of Dijon mustard, I used regular mustard since that is what I already had in the house and it came out super tasty and seasoned well. I also put a little bit more olive oil in the breading mixture so that it sticks to the meat better. I obviously love this recipe and that is why I keep using it! Try it! Yummy!

Baked Chicken Wings

Delicious. used wingette's and chicken legs. I also added jalapenos, texas pete hot sauce, adobo seasoning and lawry's seasoning salt to the mix. Prior to cooking, I marinated for a couple of hours in the seasoning. Instead of cooking on a baking sheet, I cooked it in a bigger pan so that it could marinate in the juices while cooking.

Baked Pork Chops I

This was as hit in my house. Instead of Cream of Mushroom soup, I used Cream of Chicken. I also heated the cream of chicken soup, milk, and wine on the stove for about 10 minutes before I poured it on the pork chops in the oven. I also added a little sea salt, parmesan cheese, and pepper to the sauce. Since I had thin cut pork chops, they didn't need to be in the pan for 5 minutes per side to brown, and they didn't need to be in the oven for 1.5 hours either. I browned the meat, put it in the baking pan, covered it, cooked it for 30 minutes on 350, took the pan out and poured the cooked milk, wine, cream of chicken sauce on the pork chops - also added a little parmesan cheese to the top of it; then placed the baking pan back in the oven for another 30 minutes, covered. Served with basmati rice and collard greens, this was perfect and everyone kept going back for seconds. Delish!

Marinated Pork Roast

This recipe had good flavor, but when I made it, the meat came out a bit dry. The sauce deserves a really high rating, but the pork in itself was not my favorite.

Trinidad Stewed Chicken

This was delicious! It actually reminded me more of an Asian dish than a Trini dish, but I'm not Asian or Trini, so who knows. I used Jasmine Rice with it, used olive oil instead of vegetable oil, and did not have time to marinate the chicken, but this was still delicious and will be made again!

Brooklyn Girl's Penne Arrabiata

This is delicious. I actually used turkey bacon for this instead of chicken, and it turns out great. I added some red pepper to make it spicy and didn't need the eggs or the bread crumbs since I did not use chicken in it. The sauce was fantastic and very healthy. The only feedback I would give is adjust the garlic. If you like a lot of garlic, go with recipe as is. If you like a little milder taste, you can take some of it out. Fortunately, my boyfriend loved the garlic flavor and this is a hit I've made 2 or 3 times at my house now! Enjoy!

Honey Glazed Ham

This glaze was delicious! I used a pre-cooked, presliced ham, and this was great! Me and my boyfriend went back for seconds and thirds. It made Easter a hit!

Corn Pudding

This was a big hit with my boyfriend. I thought it would be a bit sweeter. I followed the directions as indicated, however I added a bit of sugar and cinnamon. This was more of a corn casserole than the corn pudding I'm used to. If you are looking for a thick "casserole", this is a great recipe. However, if you are looking for a pudding/sticky or softer style, I suggest you eliminate the corn muffin mix, insert some extract vanilla, and add some cinnamon. this was good and a great idea, just not what I was looking for.

Mashed Jalapeno-Cilantro Sweet Potatoes

This meal was ok. I appreciated the unique recipe, and I received compliments from my boyfriend on this. However, I think it would have tasted a bit better if it was a tad sweeter. I think next time I will go for more of sweet potato casserole. However, this is a very healthy version and I appreciated the idea!
