this is now my "go to" recipe! i cannot say enought good things about this.... we had surprise company while i was prepping it, so i added some extra leftover chicken and steak, (measured to about 2 1/2 cups of chix/steak) as well as using the entire 8 oz. of cream cheese and a total of 2 cups of salsa.... i wanted to stay as close to the original recipe as possible, but i had to wing it with the extra folks to feed. i threw in some hot chili peppers with the salsa/cream cheese mix and it had a very nice warm heat, without being really hot. next time i will put more sauce on the bottom of the pan, though i was begged to "not change a thing!" made 7 enchiladas, closely wrapped. i used large flour tortilla shells.
