Spicy Tortilla Roll-Ups

Six Can Chicken Tortilla Soup

I've made this soup for years,but my version calls for creamed corn and 1 can of "Ranch" style beans. Also use half pkg of Taco seasoning mix. It is sooo good.A family favorite during cold winter months.

Lemon Garlic Tilapia

I make this in the microwave.... Put fish in a glass dish--season with half the sauce---cover with Saran and micro for 4 minutes--remove from micro, remove saran and pour rest of sauce over fish. Recover and micro for 3to4 more minutes until fish flakes easily. All I add is a little Tony Chaceres seasoning. This is a quicker way to do the fish and it's still delicious.

Mama's Asian Chicken and Rice

I cooked this today and added a small bag of stir fry veggies. The sauce was way too sweet. But all in all a good recipe. Will just use 1tsp of brown sugar, next time I make it.

Asian-Style Zucchini

I love this, I use yellow squash with zucchini,onion,slivered carrots and green bellpepper and red if I have it. Bell pepper makes a difference too. I'll have to try pouring on the honey as another did. We're big on veggies.

Sausage Balls

I recently made these for a cocktail party. I rolled them in my hands into a shape about the size of my little finger and curved them, after baking them and cooling--I stored in a tin. These were deliciously crunchy, and a hit with my guests.

Kale Krisps

I wouldn't give this any stars, it's simply baked cheese--yes the Kale crisped ,but it was too chewy under the cheese. I like kale but not this way. Sorry.

Mexican Corn Pudding

I gave it 4 stars because it came out too dry. I made it like the recipe, but I only had 1 cup of corn. I mixed and followed as directed covered, it still was dry like wet cornbread. At Chevy's it's creamy like grits. Flavor was great--to serve,we ended up pouring milk over it. What can I do to correct it.?

Cracker Candy

I didn't have saltine crackers so I used Graham crackers and boy was that yummy. Like toffee. Also for ease in removal from pan, I lined the cooky sheet with foil and it can be lifted out to cool and break into separate sections.
