Grilled Fish Tacos with Chipotle-Lime Dressing

I prepared this recipe as written at least a half dozen times, with the exception of using fresh Yellowtail (my husband fishes and we have ALOT!)and it is fabulous. The fish is moist, tender and flavorful and the sauce is fantastic. My husband and friends love and request this frequently. I even received a thumbs up from a 2 and an 8 year old - minus the sauce - too spicy for them. I wonder if anyone has suggestions for an easy way to get 1/2 cup of the Adobo sauce out of the can without making such a mess....? Thanks so much for the recipe!

Smokin' Scovilles Turkey Chili

Excellent flavors! I made this last night as written, tasted it and really liked the heat level, the flavor and the texture. However, knowing my husband prefers a more beans to meat ratio than this recipe provided, I ended up doubling most of the ingredients with the exception of the tomato sauce & habanero (didn't have) and added an extra can of red, cannelli and 2 cans of black beans. Same great flavor as when tasted before doubling and served with grated cheddar and diced sweet onion. Yum! The heat level was perfect, I don't think I would add 2 habaneros when making again. When I told my husband what was in it, specifically the hot chocolate mix and the liquid smoke, he was wowed! This is now in my file box and I will be making it again!

Slow Cooker Latin Chicken

As written the dish makes the 3 star list for me. While I thought the dish was very good and tasty (I will make it again) I hate it when I have to read through the reviews to find out you need more liquid in the dish, particularly on a dish that has 248 reviews with a 4.5 rating. If you have to make changes to a dish, rate it a bit lower, I think. Anyway, I doubled the sauce, because it wasn't enough liquid to even cover the potatoes. I did double all the sauce ingredients, including the salsa, next time, I will use a med. salsa, to tone down the heat. Otherwise, I wouldn't change anything else. BTW, cooked on top of stove, in dutch oven for about 1.5 hours on low. I have also saved this recipe and will make it again with the additional sauce.

Real Chiles Rellenos

I love chele Rellenos, so to find this recipe made my day! And this recipe was so well written! I loved the authentic taste of the sauce. I did use a can of tomato sauce to save the step of pureeing the tomatoes....1 less bowl or blender to clean. I also used Mexican cheese to make it even more authentic. I think the most time consuming part of this recipe is the charring and removing of the pepper skin, but oh so necessary. To save time in the future, I have 6 in the freezer, all prepped and ready to go! Thanks Fat Dog!

Green Salad with Cranberry Vinaigrette

I made the vinaigrette only for a salad I put together with ingredients I had on hand. The vinaigrette itself was good, but really needed something to counter the tartness. I added about a teaspoon of honey and that did the trick. It was well liked by guests and it was a beautiful addition to our Christmans dinner. Thanks Nancy W.!

Butternut Squash Soup with a Kick

Wow, what a really delicious soup! I did roast the squash, only because it is so much easier to work with after roasting. Cutting the raw squash in half is difficult, let alone cutting into cubes! I used 1 1/2 jalapeno peppers, perfect bite and low fat evaporated milk. I did not serve with sour cream, the soup is so creamy you really don't need it. I will taste before adding the sugar next time, I don't think you would need it, but...? Very good and is now in my recipe box! Thanks Davey for the recipe!
