I did as others suggested and used chicken broth instead of vegetable, 1 whole yellow onion, and evaporated milk (fat free). I also added a teaspoon of ginger, and some garlic powder. We don't use butter in our house so I used a couple tablespoons of olive oil. I also had fresh pumpkin in the freezer so I used that instead of canned. This is a lovely soup. I steamed 1 cup of rice with half a teaspon of cardamom and cinnamon each, and a couple of cloves. I put the rice in the middle of the bowl and poured the soup in around the rice. That made it really hardy. A meal in itself. We will make this soup again and again. It's delicious.
