Granny Kat's Pumpkin Roll
This tastes delicious. The rolling technique didn't work well for me. When I unrolled it to put the icing on it cracked so I kind of had to smash it together there. I will try this again, but will try something different for the rolling. I also used Neufchatel cheese instead of cream cheese to cut a little bit of the fat. Again, this is totally delicious and I'll make it again.

Super-Delicious Zuppa Toscana
This is amazing soup. I used kale instead of spinach, as kale is what the restaurant uses. I also used fat free half and half instead of heavy cream and I'm not missing the fat at all. Wonderful dish.

Curry Pumpkin Soup
I did as others suggested and used chicken broth instead of vegetable, 1 whole yellow onion, and evaporated milk (fat free). I also added a teaspoon of ginger, and some garlic powder. We don't use butter in our house so I used a couple tablespoons of olive oil. I also had fresh pumpkin in the freezer so I used that instead of canned. This is a lovely soup. I steamed 1 cup of rice with half a teaspon of cardamom and cinnamon each, and a couple of cloves. I put the rice in the middle of the bowl and poured the soup in around the rice. That made it really hardy. A meal in itself. We will make this soup again and again. It's delicious.
