Individual Baked Eggs
This is great when you have to cook for a group. One glaring problem is the temperature and time. At 350 for 15 minutes the whites were still clear. I upped it to 400 and it was a minimum of 25 minutes to cook it. Next time I'll start at 400 or even 425 and expect it to take 20 minutes or more to cook. Loved them on english muffins and it was so easy to make. Will make again!

Rhubarb Berry Pudding
Lots of potential! the instructions are a little confusing. It took 15 minutes to cook the rhubarb and I simmered for almost an hour once everything was in and it still did not thicken. The flavor is really good so I can use this as a sauce on ice cream on something. Next time I'll use 3 1/2 cups water and 1/2 Tablespoon more of cornstarch. Will try again.

Avocado Pie
I'm giving it a 4 for potential and creativity. I'm used to avocados in savory things not sweet, which I think made it harder for me to enjoy this. On that note this is really easy to make. I used a graham cracker crust and would stick with that. My pie wouldn't set up so I had to freeze it. First bite was good, very sweet, then suddnly felt overwhelmed by the sweet and was left with an avocado after taste that was a little weird for me. I did reduce the lemon juice a little and probably shouldn't have. I may try this with 8+oz of cream cheese next time. Personally I'm not planning on making this again soon, especially with how expensive avocados are. BUT if you like avocados give it a try.
