Hot German Potato Salad III
This is SOOOOOO GOOD! I had not had anything like it before, and have made it 5 times in the last few weeks. I do agree with PP - red varieties tend to hold up better and don't turn to mush. I also double the sauce, but it it great just the way it is :-)

Black Bean Brownies
Soooo Good!!!!! I had low expectations I admit - and boy was I surprised! Who knew something without flour could be so cake like in texture. And to see it rise that much - unexpected. I was a little worried as I used my Vitamix blender - it turned the batter to soup. I used coconut oil (dairy allergy) and added the baking powder as suggested. I can't do choc. chips or walnuts - so I added in hemp hearts! POT BROWNIES LOL! I just ate half the pan. Better save some for the family :)

Pumpkin Cookies I
I love a good 'breakfast cookie' and these are SO GOOD! Like so many other seasoned cooks, I can't leave well enough alone. Instead of butter (dairy allergy), I used half coconut oil, half apple/pear sauce (raided my toddlers stash). I only used half the sugar, and added some nutmeg and ginger, and used Craisins. The trick when baking these is to remember that they may not look done, but probably are. They're a chewy cookie, and firm up once cooled - if you can wait that long :) I just ate 10. To be fair, they were little ;)
