Basil Chicken over Angel Hair

This went over pretty well with the family. I used grape tomatoes sliced in half so the tomatoes didn't get really limp. I also used chili flakes rather than the hot pepper sauce. In these types of dishes that include cooked chicen I have found that poorly prepared chicken can negatively affect the outcome of the dish. For this one, I cubed the chicken raw and put it in a resealable bag along with about a tablespoon of oil. Shook the bag to coat the chicken and then poured in a package of McCormick's Sweet Basil & Oregano Bruschetta Chicken seasoning. Spread it on a baking sheet and cooked at 350 degrees for about 12 minutes. Made the rest of the dish as the recipe indicated. Will be making this again.

Garlic Chicken

I made this recipe many years ago but did not rate it. I can't tell you how many times our family has enjoyed this simple but delicious dish over the years. The whole family loves it and it's a regularly requested dinner.

Waffles I

Just as easy to make as Bisquick but cheaper. I add extra sugar and vanilla. This recipe makes really great waffles.

Easy Indian Butter Chicken

The first time we made this it took us a really long time but we made it again tonight and it only took about 30 minutes total. So good. So easy. First time we added chili flakes but thought it probably didn't need that so we left it out the second time. It's one of those dishes that smell so good cooking.

Chicken Breasts with Lime Sauce

Huge hit at our house. Made it twice last weekend to rave reviews both days. First time I followed the recipe but did cut down on the butter a little and added a tiny bit of half and half instead. The second time I did salt the chicken a little before putting in the egg mixture. Also added garlic to the olive oil to cook the chicken. I increased the lime juice and cream because everyone wanted more sauce. Both times I used green onions rather than chives.

Meatball Nirvana

Made these last night. They were fantastic. I may have heaped my chili flakes a little too much for my husband's liking but I thought they were great. I noticed he ate any remaining meatballs so that crack about them being a little too spicey may not mean much when all is said and done. I did not have sea salt so used Kosher. I didn't have Italian seasoning so I used the recipe on AllRecipes called Italian Seasoning II and left out the oregano since this recipe called for oregano. I had only plain bread crumbs so I threw in some oregano in them. Don't overcook them. I think I did, but they were still really good.

Authentic Enchiladas Verdes

These were phenomenal! Some in our group wanted the Queso Fresco, some wanted Jack or Cheddar and some wanted Jack & Cheddar. Some wanted the cheese melted in the oven or microwave, some not at all. Some wanted it topped with Cotijo after the verde sauce was poured over it. No matter what, everyone raved about it!

Dijon Thyme Chicken

I have made this so many times because it is a huge hit at our house and it's super easy to prepare. Each time I make it I cut down the butter. I'm down to 3 or 4 tablespoons now. Still tastes great. We didn't like it with the onions so now we leave those out. We always use fresh thyme because the dried thyme isn't even close in taste.

Chicken Breasts in Caper Cream Sauce

This recipe could not be easier. Don't let that fool you though. This is so good. I only had one giant chicken breast and I'm not much of a measurer so I just used what seemed right. I used half and half not whipping cream. This was fantastic. Family said it was a keeper. Maybe next time I'll make more for them.

Addictive Sesame Chicken

This was very good. Very easy to make for an Asian dish. I steamed some broccoli and green onions and added them at the end. I only had hot sesame oil so I used that in place of both the sesame oil and chili paste. Worked out fine as far as we could tell. We thought the sauce was great. Next time we might add various bell peppers and other vegetables. It was lick – your - plate good.
