Salmon with Tomatoes

Both my husband and I really enjoyed this meal. I used shredded parm. cheese instead of grated, and I added 3 green onions cut into slivers (added them at the same time I added the tomato mixture). We even ate it just by itself without pasta or rice. This will definately be a dish I make again.

Indian Chicken Curry II

I really changed this recipe around. I used a whole chicken cut up into 4 pieces, doubled the sauce part of it. (excluding the tomato paste I didn't have any) I poured the sauce over the chicken pieces and marinated overnight, then baked at 400 degrees for 40 minutes. Served it with brown rice and some steamed brocolli. We both loved it and the only reason I didn't give it 5 stars was that I agreed with previous members in that it needs some veggies in the recipe...not sure which ones though.

Honey Glazed Pork Tenderloin

This was ok, it needed more flavor for me so I doubled the balsalmic vinegar and it still needed something. I don't think I will make again.

Chiles Rellenos (Stuffed Peppers)

very labor intensive with having to blacken and peel the peppers. While I was peeling the peppers they fell apart so I could not seal them back up, and therefor could not finish the recipe as directed. (I would have had tooth picks all over to hold them together). So I stuffed them as directed with the meat mixture and cheese on top and baked them. I used the cheese the recipe called for on two of them and used goat cheese on the other two. Flavor was good but too much work for the return.

Chipotle Crusted Pork Tenderloin

I have cooked with Chipotle powder before and knew how spicy it can be so I was really nervous about the amount in this recipe, but I decided to stick to it and I am glad that I did. My husband and I really enjoyed it. I served it with sauted onions with yellow and red peppers, which when they carmelized had a nice sweetness that complimented the pork. I also was really glad that I had made "triple corn spoon bread" which I found on Cooking Light. This side dish has a natural sweetness to it, and also helped with the heat. I have a few friends that really like heat, I can't wait to make this for them. Thank you!
