I have cooked with Chipotle powder before and knew how spicy it can be so I was really nervous about the amount in this recipe, but I decided to stick to it and I am glad that I did. My husband and I really enjoyed it. I served it with sauted onions with yellow and red peppers, which when they carmelized had a nice sweetness that complimented the pork. I also was really glad that I had made "triple corn spoon bread" which I found on Cooking Light. This side dish has a natural sweetness to it, and also helped with the heat. I have a few friends that really like heat, I can't wait to make this for them. Thank you!
