Chocolate Chip Mini-Muffins

I wanted to make these muffins as a cheaper more nutritional replacement for the store-bought mini muffins my kids like so much (and save on the amount of trash/packaging that comes with them). These turned out great. Instead of shortening, I substituted an equal part of cinnamon apple sauce and they came out moist and tasty. I also used regular-sized chips because that's what I had on hand. I also made one batch with a mix of smei-sweet and milk chocolate chips, which my very picky daughter preferred.

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

This recipe was good.. everyone really liked it at our barbeque last night. However, I cut the amount of cayenne I used in half from the recipe and it was still on the verge of being too spicy for all of us. I got comments about people's mouths being "on fire" and runny noses. Any more cayenne and it would have been so spicy you couldn't taste anything but raw heat. I also grilled some bell peppers and onions with it and used yogurt as a topping instead of sour cream and it was an essential balance to the fiery spice of the meat.

Lemon Pie Bars

I thought these tasted great. The other comments about the crust being like a shortbread are right on, but it wasn't a bad thing. I could have eaten the whole tray!!

Caribbean Chicken Salad

This was a fantastic salad, both me and my husband loved it. I would have never thought to put bold flavors like chicken teriyaki, salsa and honey-mustard-vinaigrette dressing together, but this really works. I would probably use just a half jalapeno in the salsa next time though, as it was too spicy for me, but my husband who loves spice, loved it. We also had about 3/4 cup of dressing left over.

Banana Cake VII

This tastes exactly like the delicious banana spice cakes I remember having as a child in the midwest at potlucks and get-togethers. It is absolutely fantastic. I made mine in a 9x13 pan without changing anything and it turned out perfect. I did grease and flour the bottom of the cake pan, although I noticed the recipe doesn't call for it, because I didn't want the cake to stick. I will definitely make ths again.

Awesome Ham Pasta Salad

This salad is pretty good. I used reduced fat mayo with olive oil and low-fat sour cream in my recipe.. I about fell over when I saw the fat and calorie content of the original recipe. I served it over a bed of greens. Note that the recipe makes a LOT. For our family, it's well beyond six servings. A lot of people said it tastes better the next day, but to me it tasted exactly the same. This is a great way to use up leftover ham, and it would be great for a bar-b-que.

Vegan Agave Cornbread Muffins

These are fantastic.. my new favorite cornbread. They are moist and hearty and taste even better with butter and honey. I will definitely make these again and add them to my "company" recipes. I ate these wish a tortilla & lime crusted tilapia and a salad, but they would be great with chili or roasted meats, or even gaspacho soup. And oh.. they do take much longer than 20 minutes to bake, more like 25 or 30.

Crunchy Peanut Butter Bars

These are good. I followed the recipe exactly and the texture and consistency are great. I think I was expecting them to be a little sweeter, though. They are more peanuty-tasting than sweet desserty-sweet tasting. My kids thought they were so-so, but the adults were okay with them. I would rather use my high-calorie high-fat dessert/treat calories on something more flavorful. If I make them again I might try skipping the crushed corn flakes, but they do add a nice crispy crunch.

Roasted Beets 'n' Sweets

This was a wonderful dish, I would definitely make it again. I would go well with roasted turkey, pork tenderloin, etc., and it's a nice change from the standard roasted & seasoned potatoes.
