Playgroup Granola Bars

I've gotten so I make these all the time! Even people who are way above me in baking skills ask for the recipe. Mine always turn out chewy, not crunchy, though. I don't know why. Maybe I'm not cooking them long enough, or maybe it's because I use quick-cook oats? In any case, I've made them with all different fillings and they're always a hit.

Creamy Potato Leek Soup II

I may have overcooked this slightly, which resulted in the potatoes disintegrating. I wound up with something closer to mashed potatoes than soup! Still, nobody was complaining. Delicious and simple. Am wondering if it could be made simpler by cooking the bacon and leek in the soup pot, then adding the potatoes, broth, etc to stew. Hmmmm

Oatmeal and Wheat Flour Blueberry Pancakes

I did double the brown sugar and add vanilla, but these pancakes are surprisingly fluffy considering the oatmeal. My two year olds and my husband love them!

Southwest Chicken Pie

Super good! We usually skip the pie part, and just assemble the filling as a chicken salad. It's a great departure from standard chicken salad.

Butternut Squash Casserole

I have twin toddlers, and anything I can do to get veggies in them is a plus! Sugar and butter considerations are set aside in an effort to just get them to eat veggies. They both love this stuff, and I'm happy they're getting all the goodness of butternut squash.
