Crunchy Coleslaw

Since only had a little left over slaw mix that was frozen I had to add it to the hot oil mix. Then mixed in the crushed noodles and lots of almonds. Just cooked till cabbage was heated. Husband and I really enjoyed it. Can't wait to try original recipe...cold with freash cabbage. Great on pocket book too.

Spanish Rice Original

4 stars because changed a little. Husband loved it and he doesn't care for rice. Told me to write down what I did so I could do it again. So here it is. In 3 qt pot browned the bacon, took out drained. In bacon fat cooked 1 onion, 1/ 4 yellow, green and hot peppers. 1 clove garlic. 2 tbls fresh cilentro for around 10 min. Added 1 large can whole tomatoes broken up w/ juice & 1/2 cup ckn broth. 1 tsp chili powder, S&P. added bacon. Cooked uncovered till rice cooked. topped with mexican, taco or cheddar cheese and sour cream.
