Spicy Garlic Lime Chicken

Terrific simple recipe. Served it over couscous. Only change is that I used thighs instead of breasts. Wasn't exactly spicy to me, but I know that's a matter of taste. I'm a three-star guy so maybe I'll add a little more cayenne next time.

Cheese and Bacon Potato Rounds

Awesome. Made these for a party on New Year's Eve and they were devoured. I forgot the green onions, but I did use the tip about spreading them with sour cream (though I used yogurt instead). Added an amazing creamy element.

Buying all the ingredients for this really gave me a well-stocked bar! The cocktail had a really complex flavor--like something you'd get at a fancy cocktail bar, but it was very simple to make once I had all the ingredients. Strong, too!

Simple Beef Pot Roast

Fantastic. So easy and just perfect. Obviously the cooking time will vary based on your oven and the size of your roast...you've got to handle that part for yourself! I used the "English Prime Rib Rub" from Penzey's to season it. Was in the oven after about 20 minutes of prep and made for a terrific Sunday dinner. I served with horseradish mashed potatoes just like Chef John suggested. Also served with steamed asparagus and broccoli. This is a keeper!

Beef Tenderloin in a Port Shiitake Reduction

Terrific, well-balanced flavor, and it looks beautiful. Drizzled extra sauce over mashed potatoes. Bought all the ingredients at Pike Place Market and served this for two couples for Valentine's Day dinner to great acclaim. House still smells good the next day! One tip -- when I went to buy the tenderloin, I told the butcher I was cutting it into cubes and he sold me the tail of the tenderloin for $10/lb. instead of the $28/lb. it was going to cost for steaks. This is at Don and Joe's Meat in the Market...maybe other butchers would do it too?

Made this for last Friday's baseball wild card games and it didn't make it through the ninth inning! As far as the spice level, I'd call it "three-star" spicy, which is just what I like. Delicious.

Summer Squash and Sausage Stew

Delicious! Amazing flavor for only needing 30 minutes to cook. Bought the veggies at Pike Place Market and made this as a special treat for my girlfriend--it was her first day at a new job. Was surprised the summer squash didn't disintegrate after 30 minutes of simmering but it was a-ok...nice and chunky and hearty. While the stew was simmering we had a little caprese-style salad--sliced heirloom tomatoes with fresh basil, balsamic vinegar, and oil on top. Altogether it was an easy dinner that won me major points!

Terrific. I loved it and so did my girlfriend. - I added about a teaspoon of red pepper flakes for a little extra spice, - I used angel hair pasta b/c that's what I had on hand - I added a teaspoon of sugar as suggested Otherwise left as is. Really tasty. Thanks, Brianna!

Awesome. The gf and I made it for dinner, served it with steamed cauliflower and roasted sweet potatoes. Light and tasty. Didn't have the lemon slices, so we used orange slices instead--was still super tasty.
