Puts the flavor right into the corn! I didn't need to slather butter on the individual pieces...though I guess you could :) Great if you're cooking for a crowd.

Summer Squash and Sausage Stew

Delicious! Amazing flavor for only needing 30 minutes to cook. Bought the veggies at Pike Place Market and made this as a special treat for my girlfriend--it was her first day at a new job. Was surprised the summer squash didn't disintegrate after 30 minutes of simmering but it was a-ok...nice and chunky and hearty. While the stew was simmering we had a little caprese-style salad--sliced heirloom tomatoes with fresh basil, balsamic vinegar, and oil on top. Altogether it was an easy dinner that won me major points!

Artichokes

Loved the idea of rubbing with lemon. Great tips in the reviews, I added the vinegar and served with lemon butter and a balsamic vinaigrette. Steamed with extra water as suggested in the reviews for about 25 minutes, which left the artichoke meat really crisp-tender.

Spicy Garlic Lime Chicken

Terrific simple recipe. Served it over couscous. Only change is that I used thighs instead of breasts. Wasn't exactly spicy to me, but I know that's a matter of taste. I'm a three-star guy so maybe I'll add a little more cayenne next time.

Delicious! Added about 1/8 tsp cayenne pepper at the suggestion of reviewers, which made it pretty darn spicy! Will make again--perfect for the coldest day so far this fall.

Corn with a Kick

Made this with fresh corn and canned tomatoes/chilis. Did 1/2 tsp of cayenne, which was spicy enough for me, but my spice-loving girlfriend said she would've been okay if I doubled it. Oh! Also drained and rinsed and added a can of black beans at the end. Really good, simple veggie dinner or side.

Awesome. The gf and I made it for dinner, served it with steamed cauliflower and roasted sweet potatoes. Light and tasty. Didn't have the lemon slices, so we used orange slices instead--was still super tasty.

Easy Spicy Mexican-American Chicken

Awesome. I rarely find recipes spicy enough for my gf, but this one fit the bill. I had a beer on hand to drown the spice. :) Made this slightly different, I browned the thighs in a cast-iron skillet, poured the sauce over, and baked them uncovered in the skillet. Had a thermometer on them and it took about 20 minutes in the oven that way. I boiled down the sauce after I took the skillet out of the oven and poured it back over the chicken (and over some couscous and corn I'd made).

Terrific. I loved it and so did my girlfriend. - I added about a teaspoon of red pepper flakes for a little extra spice, - I used angel hair pasta b/c that's what I had on hand - I added a teaspoon of sugar as suggested Otherwise left as is. Really tasty. Thanks, Brianna!

Really tasty, everyone loved it. If I had to do it over again I'd use a pot with a larger base--I was using chicken hindquarters and had to brown them in two batches.
