Puts the flavor right into the corn! I didn't need to slather butter on the individual pieces...though I guess you could :) Great if you're cooking for a crowd.

King Beef Oven Brisket

Really easy to make; end result was a tender brisket that soothed our souls after a crushing Seahawks loss. I bought a 2.5 lb brisket, so I only did 45 minutes for the first step and baked for 2 hours rather than three, which turned out perfect. I also didn't have enough beef stock to cover, so I poured in a box of chicken broth and a couple of cheap beers.

Summer Squash and Sausage Stew

Delicious! Amazing flavor for only needing 30 minutes to cook. Bought the veggies at Pike Place Market and made this as a special treat for my girlfriend--it was her first day at a new job. Was surprised the summer squash didn't disintegrate after 30 minutes of simmering but it was a-ok...nice and chunky and hearty. While the stew was simmering we had a little caprese-style salad--sliced heirloom tomatoes with fresh basil, balsamic vinegar, and oil on top. Altogether it was an easy dinner that won me major points!

Artichokes

Loved the idea of rubbing with lemon. Great tips in the reviews, I added the vinegar and served with lemon butter and a balsamic vinaigrette. Steamed with extra water as suggested in the reviews for about 25 minutes, which left the artichoke meat really crisp-tender.

How to Make Bordelaise Sauce

Foolproof and AMAZING. I actually forgot about the sauce while the wine was reducing, it went down to nothing and I thought the sauce was ruined. Figured I'd pour the stock in anyway (I used chicken stock since I didn't have veal stock) and just see what happened...it still tasted unbelievable. Poured this sauce over a broiled Rib-eye -- one of the best meals I've had in ages, restaurants included. Also -- I only had 1 shallot but I put in the same amount of liquid and let it reduce a lot. It was still quite good.

Spicy Garlic Lime Chicken

Terrific simple recipe. Served it over couscous. Only change is that I used thighs instead of breasts. Wasn't exactly spicy to me, but I know that's a matter of taste. I'm a three-star guy so maybe I'll add a little more cayenne next time.

Corn with a Kick

Made this with fresh corn and canned tomatoes/chilis. Did 1/2 tsp of cayenne, which was spicy enough for me, but my spice-loving girlfriend said she would've been okay if I doubled it. Oh! Also drained and rinsed and added a can of black beans at the end. Really good, simple veggie dinner or side.

Halibut with Creamy Garlic and Herb Sauce

"One of the best dinners you've ever made" -- the g.f. Made this with halibut from Pike Place Market, so the fishmonger gets an assist, but this sauce was absolutely fantastic. Definitely prep all the ingredients ahead of time and put them in little bowls. I'd say all told you'll spend about an hour of solid work to make this, but it's worth it. Served with whole-grain rice and baked romanesco.

Lemon Chicken Orzo Soup

So delicious! Perfect on a cold, rainy, Seattle night. I added some parsley leaves at the end for garnish and they also lent a little bite to the final product. Scaled it down to 4 and it was a perfect main dish for two. Thanks so much ReneePaj!
