Buttery Soft Pretzels

I would like to upgrade my rating to 4 stars and that is related to too much flour and the temp being too high. I tried the recipe a second time and it was better. I WOULDN'T advise putting any eggwash or butter on the pretzels BEFORE baking.

Pastry Cream

Absolutely to die for.......mmmmm.....I was licking the bowl, spoon, etc. I did manage to get most of it into the refrigerator to set. I served this with a choux pastry to my husband and he was licking his plate to the last bit. A couple of drops fell to the floor and the dog immediately licked that up and was begging for more.

Peach Pie

I will give 4 stars only because of the adjustments I had to make to the recipes. The end result was delicious. Three tips: add 1 Tbsp cornstarch, decrease the amount of sugar to 1/2-3/4 cups and leave pie in the oven 1-2 hours AFTER baking time to set.

Pecan Sour Cream Pound Cake

My end result was good AFTER several adjustments, hence the 3 stars. I decreased the amount of sugar, increased the amount of vanilla, added pecans to the cake and on top and didn't overbake it. I used another recipe for the icing as I don't like OJ added to my icing. I cut the recipe in half because I was only serving 4 people. Good, but NOT great recipe.

Beignets

F A B U L O U S!!!!! My husband ate about a dozen of these. I made only half the recipe and I still got alot. They are so light in the center and a bit cripsy on the outside......hmmmm. I did add some vanilla extract to my batter. Delicious!!!

EXCELLENT AND EASY TO MAKE. MMMMM!!!!! I spread it on a Lemon Sponge pie......OMG! You must try. I must admit you might have to adjust the amount of sugar though; add more.

Norwegian Almond Cake

Excellent!!!! I am questioning the amount of butter to use for the custard. My custard was just a little too loose for me, but the taste was great. I did use a bain marie to make the custard. I think I will just use a saucepan next time. I used almond meal instead of chopped almonds. It gave the cake a smoother texture. I sifted the meal once and as well the confectioners' sugar. I also lowered the temp of my oven to 375 degrees F; 400 degrees F in my opinion is too hot.

Hungarian Goulash III

I only gave it 4 stars because I had to make some adjustments. I didn't think the vinegar was necessary. I decreased the amount of brown sugar to one tablespoon and increased the ketchup to one cup. Very tasty though. My husband gave it 4 stars too.
