Vegetarian Chickpea Sandwich Filling

Using green onions adds a great flavor. If you use veganaise, this is a great vegan recipe. I spread my sandwhich mixture onto two pieces of bread, put a slice of cheese on top, and put it under the broiler until the cheese melted. Tasted like a tuna melt :)

Quick and Easy Pizza Crust

This was the easiest pizza crust I've ever made, and very tasty. I used two 8" cake pans, to make "deep dish" style pizza. I baked for 15 minutes @ 450 on the bottom rack, and both pizzas turned out great.

Oatmeal and Wheat Flour Blueberry Pancakes

I just made these, WOW. They are DELICIOUS. I took the advice of others and halved the recipe, except the brown sugar, and added a little cinnamon. THESE ROCKED. I will absolutely be making them again.

GREAT, easy, basic scone recipe that you can easily add your favorites to. A lot of cakes and pastries don't turn out well in high altitudes, but I had no problem with these : )

Sicilian Lentil Pasta Sauce

I just got done making this sauce, and it is REALLY good. I didn't use the zucchini because I didn't have one, but used extra mushrooms instead. I also used a can of chopped tomatoes in place of the 1/2 cup water and second can of tomatoe sauce...more texture and flavor. OH, and also substituted one cup of the water for one cup of vegetable stock. This really does have a "meaty" flavor with out the meat. I will definitely make again!
