I'm a housewife and mommy of three. Not much of a cook but getting better over the years. I no longer depend on hamburger helper for meals. Not really into cooking so much though, kinda feels like a chore sometimes but I really love baking.

Right now I am really having alot of fun trying out cake recipes.
My cooking triumphs
Valentines day 2012. I made Red velevet cupcakes with cream cheese frosting all from scratch. I know it doesn't sound like much but it was my first time making cake without a box and I was really thrilled that I managed not to mess it up. But now I cant go back to box cake mix again. Homemade cakes are soooo much better! so since then I have really been having alot of fun baking goodies.

Simple White Cake
I made cupcakes with this recipe yesterday to test out for my sons first b-day next month, they were really tasty but did come out a little dry even though I onled baked for 12minutes and added an extra 1/4 cup of milk. Overall they were yummy and I would like to make a 2 layer 9in cake with it but not sure if I should double or triple the recipe. any advice? also anyone think buttermilk would be better in this recipe and might help with the dryness? I know nothing about baking and just started recently to make baked good without a box so Im I always reading advice on here.
