Gluten Free Chocolate Cake
I didn't care for this. On the other hand, my kids loved it and others at the party said it wasn't a bad flavor or texture. I was looking for a light moist chocolate cake. What I got was a dense spongey cake that seemed way too wet even though I cooked it for longer than the directions suggested. The flavor was off too but that had to have been my flour blend. The sorghum in it was too strong.

Baked Honey Mustard Chicken
Wow! That was delicious! I subbed dijon mustard for yellow and omitted the paprika (allergies) and it was amazing. I had 6 rather large pieces of chicken so it filled a 9x13 pan and the chicken was pretty well covered with the marinade even though I reserved half of it. I covered it with foil for the first half and left it uncovered for the 2nd half of the cooking. Because the pieces were so big it took closer to an hour to bake. Yum! I will be making this for my family again as well as taking it when I deliver meals for life events.

Italian Vegetarian Patties
I cooked this as written minus the cheese. After 40 minutes the rice/lentils still had a lot of water so I just took the lid off and let it simmer until it thickened up. My food processor was too small to fit it all in so I just did the lentils and rice in there and then threw it all in my stand mixer. That worked fine. I don't love that they are fried but they are soooo tasty. What a treat! I can't wait to try them as "meatballs" or as a lettuce wrap. I have one in the oven to see how they bake up and it looks good so far. Update....I have made this several times now...all very tasty. My favorite way is to freeze them uncooked, individually packaged, and I just thaw them as needed. I cook them in an iron skillet with a little oil.
