Thai Curry Chicken and Rice

Wonderful dish! We are wimps when it comes to spice at my house, "Minnesota Mild" if you will. So I made a few adjustments to the recipe based off other reviewers. To make it more mild and edible for us, I used 1tsp of curry powder (added to the chicken after it was done cooking and just before adding the veggies, mushrooms and peas in our case). I also doubled the cream cheese, milk and pepper. We will DEFINITELY be making this again!

Sauteed Garlic Asparagus

Absolutely, amazingly, mouthwatering good! I cut back on the butter a bit and used a little extra virgin olive oil in place of the "missing" butter. I even added an extra clove of garlic, and it was divine!

Rhubarb Cream Delight Dessert

Was looking for something to make with my rhubarb that wasn't pie or crisp. This cheesecake is amazing! A perfect combination of tart and sweet. I only did two things differently. First I "cheated" and bought a premade chocolate graham cracker crust; second I used low fat cream cheese. We will definitely make again! It's saved both on the computer and on the iPod.

Angela's Easy Breaded Chicken

Will definitely make again! The only changes I made were I used premarinated lemon pepper chicken breasts and low fat Italian dressing, because those were what I had on-hand. Very simple, yet very delicious recipe.

Garlic Chicken Stir Fry

Awesome dish! Very flavorful and wound up feeding 6 people (5 adults and a 3 yr old) with enough leftover for 2 lunches! and while I was worried about all the garlic, it works out perfectly. Three changes due to what we had in the house and the number of people coming over: I used 2 bell peppers (1 red and 1 orange) and half a bag of broccoli slaw instead of the cabbage and peas and sesame seed oil as we didn't have peanut oil. Served over brown rice. Will definitely be making again!

Best Lemonade Ever

Loved it! True to the title of the recipe, it was the best. I added 10 oz of smashed strawberries to make a refreshing strawberry lemonade. I made it this afternoon to have with dinner, and 5 of us (4 adults, and 1 child) almost drank the entire pitcher! Will definitely make again. Well worth the time to make when you know what's in it.

Easy Slow Cooker Meatballs

These turned out amazingly good! The flavor was perfect. The only changes I made were due to what we had in the house: dried chopped garlic, dried parsley, and 2 cans of diced tomatoes (one mashed to oblivion) instead of the crushed and puree. 5 hrs on low and 1 hr on high. Awesome when served with basil pasta! Will definitely make again.

Basil Burgers

Excellent burgers! Very moist, will definitely make again. A few changes due to what we had in the house. I cut back a bit on the Worcestershire sauce since we only had a 1lb pack of hamb. defrosted. Instead of the full 3T I used 2T + 2 splashes, I also used 1 clove of fresh garlic instead of the garlic salt (not going to hurt anyone to cut back on salt) and 1 cube* of fresh basil. One more thing. We took another reviewers advice and added sauteéd mushrooms and sliced tomatoes to the burger. Topped it all off with Muenster and Provolone cheeses. *We chop fresh basil, portion it out into an ice cube tray, add a bit of water and freeze it.

Slow Cooker Chicken Stroganoff

After reading reviews I made a few alterations. Cut out the butter completely and replaced it with fresh baby Portabella mushrooms and 1/2 C of water. Used FF cream of chicken soup and FF cream cheese. Added soup and cream cheese after 4.5 hrs. Also added garlic powder, 1/3C sour cream, and 2Tbsp of fresh frozen basil. Was too salty with just the original ingredients. Will be making this again with the same alterations.

Easy, Cheesy Tortellini Bake

Excellent dish, we will definitely be making this again! It goes wonderfully with garlic toast, which you really do need with the amount of sauce this recipe creates. A few changes and substitutions though. I cut back on the tortellini by about half, and added 1lb of lemon marinated chicken; then substituted the Alfredo sauce with an 8oz tub of Sundried Tomato Basil Philly Cooking Cream. It was still a little sweeter than I like, so I added a can of oregano, basil diced tomatoes and about 1Tbsp of fresh (from our garden) frozen chopped basil. Topped with only 1C/4oz of Mozzarella and baked at 350F for 30 min instead of broiling.

Chicken Spaghetti IV

Excellent dish! A few tweaks to mine though. I used lemon-pepper chicken because it had already been out on the counter to thaw for a half hr, the occasional hint of lemon was refreshing! Instead of mixing the sauce with the pasta then adding the chicken mixture, I added the sauce and tomatoes right to the chicken mix and let it simmer while the noodles were cooking. I also used a full jar of spaghetti sauce (essentially doubling what's listed) and added: 1 14.5 oz can of diced tomatoes, 1/2 tsp of oregano and about 1 of fresh frozen basil (we chop the leaves then freeze them in an ice cube tray) so for this dish I used one cube.

Cabbage and Pasta

Excellent side dish, goes great with meatloaf! A bit heavy on the butter though, so I cut back. Instead I used 6T butter + 2T olive oil. I also recommend using egg or macaroni noodles instead of the farfalle.

Heavenly Potatoes and Ham

I did a half recipe, as there are just 3 of us here. I substituted cream of mushroom for the chicken soup and (accidentally) added the whole can. Other substitutions were: used leftover garlic mashed potatoes, left out the salt, used Italian-style bread crumbs, cut WAY back on the butter and topped the whole thing with fresh mushrooms. It turned out fantastic! My dad, who never has more than 2 servings, went back for a smaller 3rd serving. It definitely doesn't need added salt (the ham has enough as it is).
