Disney's Ratatouille

This was absolutely amazing. I only made three changes. I used a 9 by 13 in pan. I added a can of fire roasted diced tomato with the tomato paste (added less water bc of this). And I didnt have fresh garlic so I used a scant Tablespoon of garlic powder. This was literally the best ratatoullie ever. You have to try it.

Cheater Pierogi

So easy! Ok so I didn't follow the potato filling recipe, but I did use wonton wrappers and it works great! I used about 2 teaspoons filling and crimped the edges with egg white. I boiled them 2-4 minutes then let them cool completely. I froze them and sauted them when needed in butter and they are excellent (similar to store frozen perogies). very good!

Crustless Cranberry Pie

This was truely amazing. I only used 1 egg because I only had one egg, but it turned out delicious and it was almost cookie-like in texture which I loved. I also tried it with pomegrante, which was seedy but very delicious (I substituted half of the butter with applesauce and that turned out good too). Worth a try!

Peanut Butter Vegetable Chicken Soup

If you are skeptical you should try it. My husband made it without any chicken, it was delicious. With the leftovers we added chickpeas and curry. It was delicious. It does smell peanuty, but the taste is different. I loved it.

Oatmeal Peanut Butter Cookies III

These were delicious. I didnt add the filling I just made the cookies and they were probably the best peanut butter oatmeal cookies ever. Perfectly moist and chewy

Turkey and Quinoa Meatloaf

My husband used this recipe to make meatloaf. I don't think he followed it exactly but I gave it 5 stars for the quinoa addition. It was a nice texture. He also used real pieces of bread which was tasty too.

Chocolate Covered Peppermint Patties

These turned out great. My mixture was a bit more runny than I wanted (but it could be because I overcooked my potatos). So I added sugar, but I didnt want to oversweeten the mixture. I ended up opening a box of flaked potatos to thicken it up to a dough consistancy. I added sugar or flakes depending on whether or not it was too sweet. I also added more mint extract. I think this recipe is great. We melted andes chocolate baking bits for the coating which had a great dipping consistancy (I would highly reccomend).

Cathy's Banana Bread

I am going to have to try to make this again. My first try seems a little dry and crunchy on the outside. I baked it for only 40 minutes too. I placed aluminum foil over the top when I realized it was getting a little burnt but the middle was still not done. I think I did something wrong. Last time I made pumpkin bread I undercooked it, so I wanted to make sure it was done in the middle on the top. Oh well, it still tastes great. I added walnuts and wrapped it up to lock in moisture.

Oat Waffles

I am more of a pancake person, but these waffles were so delicious. I followed the recipe; except I used coconut oil instead of canola oil. TRUST ME THIS IS A GREAT SUBSITUTION- I would highly reccomend trying this recipe with the coconut oil. I also used the apple cinnamon syrup recipe that I found on this website too!

Frozen Chocolate Graham 'Ice Cream' Sandwiches

WOW. I had my doubts as to if this was going to be good. But it really surprised me. I used the chocolate raspberry Newton cookies (which are flat and crispy) instead of crackers. And I used fat free cool whip. It was great, I mean its not ice cream (but thats the point). This is so simple and quick to do and it freezes fast. Will definitely try different cookie combinations or mixing peanut butter or mint into the cool whip!

Frozen Chocolate Chip Cookie Dough Balls

These were delicious! We made a white chocolate Macadamia nut cookies. I covered them with chocolate following the one of the reviewers suggestions: I put the frozen dough ball on a fork and then spooned white chocolate over the ball. Then wiggled the fork up and down to get the excess chocolate off...worked really well. I used a 1 1/2 Tablespoon scooper. This is probably too big, they are really rich!

Dairy Free Chocolate Pudding

This is a fantastic alternative. I'm not vegan or lactose intolerant, I just like eating healthy. I wanted to make homemade pudding, but when I looked recipes up it called for eggs and such. I just wanted to keep it simple and healthy. This recipes provides just that. Its great tasting and can easily be changed around a little bit to make it more interesting. The first night I made it, I pretty much stuck to the recipe but I used dark chocolate almond milk instead of soy...it was simple and delicious. However, the second time, my boyfriend added a little peanut butter and a handfull of chocolate chips...that too was delicious.

Cake Balls

These are great. I made carrot cake balls using homemade cream cheese frosting. I used just egg whites (+1 egg white) with the cake mix. I messed up with the white chocolate coating - for some reason it got chunky (I might have heated it up to much or something) - so instead of throwing it away, I added milk and butter to the chunky chocolate mess and it smoothed it out. It looked like a glaze. It pretty much tasted like a soft carrot cake glazed donut. After being in the fridge over night it really soaked in and hardened the outside: they are delicious...probably the best mistake I ever made cooking.
