Rempel Family Meatloaf

The best meat loaf I've made in a very long time. I added 1/4 tsp liquid smoke and my husband really enjoyed that. I also glazed it as suggested with 3 tblsp. ketchup, 1 tblsp. honey, and 1/2 tsp. worcestershire sauce. I heated it till the honey was melted and smooth, spooned it over meatloaf before baking. Yummy!

Curried Rice Pilaf

Was very good for a change. Followed some advice and sauted everything except rice, curry and broth until brown and then added a bit of broth to get all the bits from the pan and then dumped everything into my rice cooker. Turned out very well.

Seasoned Fan Potatoes

I followed the advice of another review and placed the potato between 2 wooden spoon handles to cut. Worked like a charm! I added more seasonings- additional salt, chives, paprika and rosemary with a bit of olive oil sprinkled on as well, plus I doubled the cheese and peeled my potatoes. I made this for a group of friends along with bbqed chicken and it was a hit!

Honey Walnut Shrimp

I liked the coating very much, nice and crispy. Used cornstarch instead of mochiko. I think this would be good as a coating on homemade fries!

Pumpkin Chocolate Chip Muffins

I used brown sugar instead of the white, used applesauce instead of the oil, increased pumpkin to 1 cup, increased the cinnamon to 1 1/4 tsp., added 3/4 tsp ginger and omitted the baking soda

Grandmother's Buttermilk Cornbread

very good! Use only half the amount of sugar and if you use it as a base for an enchilada dish then use even less or omit altogether. If you're in a hurry, preheat your cast iron skillet in the oven and bake it in there. Took way less time to cook.

Beef and Bean Chimichangas

I like that these are baked instead of fried. I omit the chopped onions and green bell peppers and substitute 1 tblsp taco seasoning for the taco sauce. Serve with salsa and sour cream along with the lettuce and tomato

Party Punch IX

I made this for my daughter's grad party. The colour was purple, so I used grape jello. Handy that is can be made ahead of time. The recipe says its 40 (4 oz) servings. It's really double that! I ONLY USED HALF THE AMOUNT OF SUGAR AND EVEN THAT WAS TOO SWEET! You can use 1/3 cup well-rounded bulk jello mix per box called for.

Maple Walnut Muffins

my daughter's all-time favorite! I only use 1/2 tsp. salt instead of a whole one, omit the butter, use artificial maple syrup, and add 1/4 cup sour cream and 1 tsp maple flavoring. Makes 2 dozen smallish muffins. Very yummy!

Pumpkin Cheesecake II

Top with glaze: 1 cup whipping cream and 3/4 cup maple syrup. Simmer for 20 minutes add 1/2 cup chopped pecans. Pour on top of cake for last 5-10 minutes of baking. I even broiled it a bit. I made this for friends who are allergic to gluten, had to substitute finely ground cornflakes for the graham wafer crumbs though. They were very impressed!

Restaurant-Style Buffalo Chicken Wings

Or bake @ 350 for 30-45 minutes, sprayed with PAM. Baste with sauce and bake a bit longer. My son says "best wings I've ever had at home." Definite keeper!

Cheese and Broccoli Chicken Soup

Use chicken broth instead of water and bouillon. Save 4 cups of the broth to make cheese sauce... melt the butter, mix in the flour, whisk in the 4 cups of broth and then whisk in the cheese till melted.

Very good! I make this with chicken broth, hot pepper sauce and ketchup to taste instead of wine and tomato sauce. Serve with salsa, cheese, sour cream, guacomole, and lime wedges
