Pumpkin Chili

This has been a big hit at Halloween parties 2 years in a row. I use 1 pound ground beef, 1 pound sausage (I've used regular and hot), 1 onion, serrano peppers (2), 1 can black beans, 1 can canneliini beans, V8 spicy juice, 1 can Rotel, 1 can fire roasted tomatoes, 1/2 cup pumpkin, 1 TBSP pumpkin pie spice, 1 TBSP ancho chili powder, no sugar. I cook the beef, sausage and onion on the stove and then put it all in the slow cooker on low. Yum - Enjoy - this is a spicy version.

Downeast Maine Pumpkin Bread

Updated review: Made 24 pumpkin muffins. Bake for 30 minutes. Decorate as mummies using Stablized Whipped Frosting for Halloween fun! Everyone loves this recipe. Gave as gifts - kids love it - better on 2nd or 3rd day if it lasts that long. I substituted 1/3 oil with applesauce and 1/3 sugar with brown sugar and 1/3 flour with whole wheat flour and it was really good.

Eggplant Parmesan II

My picky husband and children loved this dish. Too advice of others and salted the eggplant for 30 minutes before breading. Used egg whites and then dipped in breadcrubs in a ziploc bag. Baked for 10 minutes each side. Final bake time only needed about 25 minutes as it would have burned at 30 minutes.
