Eggplant Bake

Really liked this recipe. I peeled the eggplant to get out some of the bitterness instead of soaking it (had to get dinner done quickly!) and it didn't have any bitter taste. Next time I will try baking the eggplant instead of frying, because I did have to use a lot more than the 1TB of olive oil called for frying the eggplant slices. I also forgot to salt the eggplant when it was done frying, but the cheese made up for it and I don't think it needed that extra salt in the end. This recipe was a hit in our house - my husband had 3 servings!

The Best Vegetarian Chili in the World

I love this recipe! I made it at least 5 times this winter and it was a hit each time. The first time I made it, I did it exactly as written (minus the jalapeno - we have a little one.) The green peppers were a little hard, and I thought it was a little spicy with 2 cans of green chile peppers. The subsequent times, I put the green peppers and celery in with the onions at the beginning to saute and just used 1 can of green chiles. I also don't think it's necessary to add the corn at the end - adding it with everything else works fine too!

Grilled Fish Tacos with Chipotle-Lime Dressing

This is in the regular rotation at our house! It has a very light, fresh taste and it is easy to put together. It does look like a lot of ingredients at first, but it's a lot that you probably have on hand, and the marinade and sauce are mostly made up of the same ingredients. I did leave out the adobo since I don't like things super spicy and I also didn't have any on hand. Maybe we just go light on the dressing, but I have made this twice now, and we have had a lot of the sauce left over both times. Next time I will probably cut the sauce recipe in 1/2. I also make up a quick guacamole to serve with these fish tacos - yum!

Slow Cooker Cilantro Lime Chicken

I really liked this recipe! Made it as written but added a can each of drained/rinsed corn and black beans. The chicken turned out very moist and tasty, and it was so nice to be able to quickly shred the chicken with forks and serve at dinnertime. Will definitely make this one again!

Slow Cooker Chicken Stroganoff

I tried this recipe as written, as I typically do the first time I make a recipe, then I tweak from there. I was skeptical, but I added the soup/cream cheese later in the cooking time as suggested. That part was fine - although I'm not really sure what benefit you get from adding it later as the chicken sort of poaches in the butter and doesn't get brown or anything (at least it didn't for me). The part that made me rate this recipe as "ok" was the Italian dressing mix. The mix packet made the dish just too salty for our tastes. Like some other reviewers have said, next time I will either add 1/2 a packet, use regular Italian dressing, or just add my own herbs and spices. I served it over brown rice (totally unseasoned) and with broccoli (also totally unseasoned, on purpose to dilute some of the salty taste when we mixed the chicken with the rice and broccoli) and that seemed to work pretty well. My family didn't complain of it being salty all mixed together, but after dinner my husband did say "I'm so thirsty!" so even though he didn't equate that with the saltiness of the dish, I did!

Cheesy Chicken Asparagus Casserole

This was a hit in our house! I did the same as the other reviewer - substituted cream of mushroom soup (had on hand), plus added sauteed mushrooms. Also used whole wheat spiral pasta instead of white. It turned out great. Hubby had 3 servings!

Fruity Curry Chicken Salad

Thank you so much Karen - we've definitely found a new favorite recipe in our house! Made this almost exactly as written except used a Honey Crisp apple and regular raisins because that's what we had on hand. Served in pita pockets. My husband raved about it and said, "let's put this in the regular rotation." We have made it twice in the last 2 weeks!

Sesame Shrimp Stir-Fry

This was great! I really liked the consistency of the sauce, and the sesame seeds / oil gave it a really nice nutty flavor. The ONLY thing I am going to change for next time is to just use a pinch of the cayenne pepper - it was too spicy for my family with the amount listed.

Fish Wellington

I thought this recipe was pretty good. It was easy to make and looked great - the puff pastry I bought was the perfect size, and the egg wash on top gave it a nice golden crust. I thought the taste was good, but unfortunately the family didn't rave about it as much as I was hoping. I got more of an, "eh it's pretty good" reaction. Like other reviewers, I didn't use the pate; I used regular smoked salmon which I finely chopped and mixed with the cream. Since I didn't use the pate, maybe it could have used a little salt to really pull out the flavors.

Banana Banana Bread

Great banana bread! I added a few things based on other reviews - 1 tsp cinnamon, 1/2 tsp nutmeg (which I sifted in with the dry ingredients), and 1 tsp almond extract (mixed in with the bananas). I had 5 bananas and didn't measure them. Using 5 bananas, the banana flavor is there, but not overpowering, and the bread came out moist. I also sprinkled a little sugar and more cinnamon on top before baking for a nice crunchy topping. Finally, I baked this using 4 mini loaf pans as opposed to 1 large loaf pan. The 4 mini loaves were pretty small (the bread was not quite at the top of the pan after cooking), so I might try 3 mini pans next time. Will definitely make this again!

Berry Smoothie

Delicious! I used frozen berries, and it took about 1 and 1/3 cups of milk to get the proper consistency. Only complaint was the brain freeze I got from gulping down those first couple of sips too quickly!

Baja Fish Tacos

Made these for dinner last night, and they were delicious! We used cod, but I might use a slightly firmer white fish next time; the cod fell apart a little in the pan so it ended up more "pulled" than in pieces, but still tasted great!
