Cheesy Baked Eggs
I've made this recipe a lot, and have gotten so many compliments. It's great for company - you get an egg dish without having to stand over a pan while guests are there. I made it mostly as written the first time, except I had to use cheddar cheese instead of pepperjack (for the kids). With the cheddar, it turned out too salty for my taste. Now I just use about 1/4 tsp of salt instead. Baking the eggs makes it taste like there's a crust on the bottom. This one is a keeper - so versatile and delicious!

Eggplant Bake
Really liked this recipe. I peeled the eggplant to get out some of the bitterness instead of soaking it (had to get dinner done quickly!) and it didn't have any bitter taste. Next time I will try baking the eggplant instead of frying, because I did have to use a lot more than the 1TB of olive oil called for frying the eggplant slices. I also forgot to salt the eggplant when it was done frying, but the cheese made up for it and I don't think it needed that extra salt in the end. This recipe was a hit in our house - my husband had 3 servings!

The Best Vegetarian Chili in the World
I love this recipe! I made it at least 5 times this winter and it was a hit each time. The first time I made it, I did it exactly as written (minus the jalapeno - we have a little one.) The green peppers were a little hard, and I thought it was a little spicy with 2 cans of green chile peppers. The subsequent times, I put the green peppers and celery in with the onions at the beginning to saute and just used 1 can of green chiles. I also don't think it's necessary to add the corn at the end - adding it with everything else works fine too!
