Broccoli and Rice Stir Fry

Quick and simple meal. My only suggestion would be to taste the dish before adding salt. The soy sauce supplied enough saltiness for my preference.

Baked Doughnuts

I agree with other reviews that these don't have the consistency of typical doughnuts. They more closely resemble muffins or cake in texture. That doesn't change the fact that they are scrumptious, though! Next time, I'm just going to bake them in a cake pan and forgo presenting them as doughnuts. This recipe will make a delicious spiced cake, with a little extra nutmeg and cloves.

Big Soft Ginger Cookies

These cookies are wonderful! They make me wonder why I don't cook with molasses more often?! I made my cookies a little smaller, so ended up with 50. I also skipped rolling them in sugar and instead drizzled some spice icing over them. Delicious!

Basic Crepes

This recipe is super easy and really versatile. The crepes make for a surprisingly filling meal. The only changes I made were to substitute whole wheat flour for the bleached and olive oil for the butter--just a little healthier. I also added nutmeg, cloves and cinnamon and served them with sliced bananas and nutmeg syrup. Delish!

Basil Chicken over Angel Hair

Chocolate Chip Pudding Cookies

Because of the options that come with this recipe (i.e. pudding flavors and chip varieties), this is one of our favorite recipes for cookies. Because we're kind of health nuts, we swap out some of the bleached flour for whole wheat and use olive oil in place of the butter. They turn out superb every time!

Lower Fat Fudge Brownies

I have to agree with other bakers that these brownies turn out more rubbery than fudgy. They are also slightly bitter. If I make them again, I will substitute 3/4 c brown sugar for the whole cup white and vanilla yogurt for additional flavor. To sweeten it, I may add frosting. When I made them, I substituted 1/2 c of the flour with whole wheat and dropped a piece of semi-sweet chocolate in the center of each brownie.

Greek Chicken Pasta

I fell in love with this recipe the first time we tried it. We had just discovered the wonders of artichokes and stumbled across this. So good! I would recommend this to anyone!

Penne with Vegan Arrabbiata Sauce

As other raters suggested, I pared down the ingredients considerably. We still had leftovers, but since there are only two mouths to feed in my house, I didn't want to go overboard. The recipe is wonderful and full of flavor. To add a little protein, I will occasionally put a can of drained black beans in the sauce a few minutes before it's done cooking.

Artichoke Pie

I think this recipe is ok, but could be improved upon by altering the quantity of certain ingredients. The amount of cheese covers up any other flavors and makes the dish too salty. I'd really suggest making some alterations to get this meal just perfect.

Addictive Sweet Potato Burritos

My husband loves these things! It's one of the only meals he cooks. He makes enough to last us a few days because he loves them so much. The flavor is outstanding and it's an inexpensive trip to the grocery store. This is now a family favorite for us.

Fudge

Easy, fast and disappears in a flash. What more could you want from fudge? I have made these in a number of different flavors and substituted Reese's baking bits or coconut for the nuts. They're always great!

Graham Cracker Bars

This was not only delicious, but easy to alter. I had most of the ingredients on hand, but didn't have any chocolate for the top. So, instead, I spread chocolate pudding on top and sprinkled it with graham crackers. Really great!

These pastries didn't turn out as light and fluffy as I would have preferred. That being said, I think almost any filling would have been successful--next time I might try herbs and garlic or cheese.

Creamy Rice Pudding

I live in the West Indies and a lot of baking supplies are too expensive here. A dessert based on rice is perfect, though. I added cloves, nutmeg, cocoa and cinnamon bark, just because their so available here. Next time I might substitute shredded coconut for the raisins.
