Mimi's Zucchini Pie

This is a great recipe that is easy to prepare and uses a lot of zucchini. I loved the flavor and texture. I did add an extra half up of bisquick like others had suggested and I drained some of the liquid from my zucchini but not all. Next time I think I will saute the onions before mixing them into the mixture because they were still slightly crunchy after being cooked which I don't usually care for (but it didn't take away from the great taste). This is definatly a keeper and I will use it often.

Baked Omelet

This was really good. I did change it a little (not because I thought it needed it, but just to get rid of some other indredients). I put frozen potato cubes in the microwave to thaw a little, then layered the potatoes, onions, and peppers into the bottom of my 8x8 dish. Then I followed the directions exactly to the recipe. I did have to cook it a little longer, but it was very tasty, and I will make it again.

Mexican Pasta

This wasn't bad. I was definatly a big fan of all the vegatables included in this meal. The only thing that I would change is to store the leftover pasta and and bean mixture seperatly. Otherwise the pasta soaks up all the liquid and makes it kind of dry.

These have a nice flavor. I substituted more applesauce for the oil, pecans instead of walnuts, and dried cranberries instead of the mixed fruit. They are tasty, easy to make and healthy.

Summer Squash Bake

I don't care for the taste or texture of squash, but this recipe has a very nice flavor, and the crackers I used (instead of the bread crumbs) helped keep the squash from getting "slimy". My husband really liked it. And while I wasn't a huge fan, I like how easy it is to make.

Pasta e Fagioli I

I really liked the flavors of this soup. I did add a pound of groung sausage (simply because we like meat) and used Northern beans because it's what I had. I would have given this five stars, but when I went to get a bowl for lunch all the liquid had been absorbed. It still tasted great, but I was looking forward to soup. Next time I will add an extra can of broth since I only had two on hand.

Crustless Zucchini Pie

This is a great recipe! It's easy, quick and does a great job of hiding a large amount of zucchini! I loved the texture and flavor of this dish. Zucchini Pancakes

I'm trying to find a recipe my non-zucchini eating family will enjoy. This wasn't bad, but it didn't really win us over. My husband liked the flavor ok, but the texture wasn't the best for me. I might have liked it better if it were a little crispier, but I don't know what to change in order to make that happen.

Fluffy Canadian Pancakes

I left out two of the egg yolks, but it still tasted like eggs. Not necessarily a bad thing, but it was just different than what I expected. Also, I think I beat the egg whites a little too long because I had a hard time incorporating them into the batter. It was a little lumpy. But over all, not bad but I'm not sure I'll try them again.

Honey Mustard Grilled Chicken

I didn't find that the chicken was anything to write home about. It wasn't bad, it just wasn't great. The sauce, however was! I really enjoyed it and I will be making it again by itself to use as a dipping sauce.

Okra Patties

I really liked the flavor and taste of this recipe. I am a lover of fried okra, but was looking for something a little more healthy and this was it! It was a lot of work though, and a bit messy for someone who has never fried anything before. I will definatly keep this recipe and continue working on my frying skills. :)

Ham and Beans

I just wasn't that impressed. I cut the sugar by half like others suggested, but I just didn't care for the flavor (or lack thereof). We ate it for supper but then ended up throwing most of the leftovers away since it was so bland.

Easy Lemon-Blueberry Jam

I really liked the flavor of this jelly. Next time I will send it through the food processor like others suggested to give it a smooth texture and I might add the pectin to make it a little firmer although you don't necessarily need it. Very nice.

These weren't bad, I just think that I need to practice making them. Mine didn't seem to rise like they were supposed to, but I think that my be my error, and not the recipe. I think this is a recipe that probably gets better each time you make it.

White Chili I

I thought this was a great recipe. I did change a couple of things, but stuck pretty close to the origional recipe. I used 2 cans of cooked chicken instead of the chicken breasts. I used half the can of green chilis, and chili powder instead of cayenne (I didn't want to make it too spicy for my daughter on the first try). Other than that I stuck to the recipe (oh and I also used two cans of beans instead of one) and it turned out great. I like a recipe that can be toned down for kids or revved up for adults. Thanks so much for this great recipe.
