Since I found this recipe, I seriously make it about once a week. It's great. I usually add salsa instead of the tomato sauce because I have it on hand. Also, If you prefer dry rice it helps to put it in the oven on about 350 for a few minutes after it's done. That just gets rid of the excess moisture.

Apple Strudel Muffins

Super yummy. I used apple sauce instead of butter in the batter and it was still fantastic (and low fat). Great way to use up the apples from my tree. One note: With most muffins you only fill up the cup 2/3 of the way full, but with this batter there was so much that I filled it all the way to the top and it turned out just fine. They don't seem to raise as much as most muffins.

Marinated Baked Pork Chops

I don't like pork chops, but these were delicious! I followed the recipe exactly except that I used 3 pork chops instead of 6 (There was a little extra sauce but that was just like an added bonus). We had these with rice pilaf and corn on the cob. Perfect summer dinner. Mmm.

Mexican Lasagna II

This is a very cheap, easy recipe that is pretty tastey. I did make a few additions, though. I added salsa to the bean/beef mixture which added a lot of flavor and seemed to lighten up the filling. Also, two layers of tortilla was definitely not enough. There needs to be at least three or four layers.
