Boilermaker Tailgate Chili

Wow!!! This was definitely the best chili I have ever made or tasted. I upped the spices a little to make it spicy, but other than that followed it to a tee & it turned out perfectly. Cooked it in the slow cooker for about 8hrs. Everybody loved it. It does make a lot though so make sure you have a really big pot or slow cooker!

Penne with Spicy Vodka Tomato Cream Sauce

This was delicious. As someone suggested I upped the vodka to 1/4 cup and upped the whipping cream to just over 1/2 cup. Served on fettucini was perfect!

Spicy Mango Sweet Potato Chicken

This meal was delicious. I substituted pineapple for mango & served it over wholewheat pasta. You can make it as spicy as you like by adjusting the hot sauce.

Easy Lovely Lemon Chicken

This recipe was delicious and very, very easy. I did cut back on the lemons a bit and used 3 lemons for 9 boneless chicken thighs. Cooked covered for 50 minutes, off for 10 then broiled just to brown. Definitely will make this again!

Almond Chicken Stir-Fry

I combined this recipe with a cashew chicken stirfry and substituted the almonds for cashews and added the pineapple from the can at the end. I used yellow, red & green peppers & fresh broccoli instead of frozen veggies. I also doubled the sauce, & didn't reduce the soy sauce. It was delicious. Next time I will try half the brown sugar.

Spicy Garlic Lime Chicken

this recipe is excellent. The little tidbits that others have added below including the chicken broth were very helpful hints. I prefer to use fresh herbs & garlic as opposed to the powders. Pounding the chicken a bit thinner is also better.

Roasted Red Pepper Lasagna

This recipe was excellent. I used fresh herbs & added fresh cilantro & oregano as well. I followed it exactly but after letting it set for 15 mins it was extremely runny. It was not runny when it originally went in the oven to bake for 30 mins
