Quick Chicken Divan

I had to fry my chicken breasts first. I used coconut oil (this brand does NOT taste like coconut) I seasoned with garlic/paprika/rosemary. I left skin on and once cooled, I pulled from bone and sliced on the bias. I put the broc. in that same pan with all the chicken goodies on the bottom. I dont know how much but enough to cover my pan which is pretty good size. I then put the chicken slices on next (3 breasts). I only used the cream of chicken but I did chop up some fresh mushrooms. Then I mixed soup with Miracle Whip w/pepper & Olive Oil. I added my cheese to this mixture as well. I think I may have added some milk also, but can't remember for sure. It was very very good.

Spicy Garlic Lime Chicken

Nice little kick. I deboned and sliced breasts lengthwise, too lazy to pound them out. I seasoned ahead of time for an hour or so. Fried in coconut oil that does not taste like coconut. I used alot more of the mix since I increased the surface area of chicken, plus I had twice as many to begin with. Very good. Will keep in my rotation.

Acorn Squash Soup

Yumm-o! Okay I wasnt sure how to tackle the acorn squash, but I knew I didn't want to peel it. So I cut it in half, scooped out the seeds, put it in a bowl with a little water and nuked it, but I can't remember how long. Then all I had to do was scoop it out and when I did that, it was pretty much mashed consistency. One squash was about 3 cups, but it was the smaller of the two that I had. I am sure it was fabulous as written but I did not use butter - instead I used Olive Oil. I used Lo-Sodium Chicken broth mix, and more of those granules for the bouillon. I used 1% milk in place of the evaporated. I also did not use the bacon on top, although that would have been divine. With all these changes, it was still excellent!

Quinoa with Mushrooms

We enjoyed this. I didnt do the butter though. And towards the end, I was needing to add some color to my meal so I added some dehydrated sweet red pepper, and probably some other stuff but I didnt do the cheese at the end.

Chicken with Mushroom Sauce

This was good. I started it out on the stove first and then finished the chicken up in the NuWave while I did the rest on the stove, then added the chicken back in. Didnt use butter though. I was using an infused Olive oil, and I also added some garlic & herb.

Dijon Grilled Pork Chops

Loved this. I didnt have apple juice so I used some cranberry juice. Later I thought I could have used applesauce but oh well, it was still delish. I fixed it on the stove top.

Sweet Corn Cake

You could healthier it up but for the first time making it for our New Year's Eve party, I didnt want to. My only changes were to use half&half, because it is all I had. I also used Creamed Corn. This was excellent. Everyone loved it and kept going back for more! Thanks for sharing!

Potato Bacon Chowder

I resisted the urge to add this or that, like cheese or chives, etc as that would have been a completely different recipe and I wanted to review it fairly as it was written. That said, it was good, but I do prefer potato soups with cheese and chives, our local dairy made chip-n-dip, but this was good as written also and I figure that I saved calories by not adding some of that other stuff so maybe I don't need them as much as I thought. Thanks for sharing!

Baked Sweet Potatoes

This was simple and perfect for a nice light side. I did get a late start so I microwaved my cubes first for about 5 minutes with just a little bit of water, then laid them out on a sheet pan and followed the directions to roast them up in the oven. Any number of spices or additions would have been nice also, but I wanted to stay true to the recipe. I cut my sweet potato into rounds first, and then cubes. DH really liked them also. He said he has had SP fries before, but he thought the cubes really held their spices better. Thanks for sharing!

Slow Cooker Cilantro Lime Chicken

Nom Nom Nom. I had bone in, but I just cooked it all and then later removed the bones when I shredded it. I had dried cilantro, and ended up adding even more. I also used a homemade taco mix, and then hit it with extra cumin. I nuked my lime for a bit so I was able to get a lot of juice, and I also scrapped some of the pulp right on into the pot. Towards the end of my cooking time, I cracked the lid to let the moisture reduce and the flavors intensify. I then shredded and deboned and put it back into this thick beautiful sauce. It was perfect and delicious! Thanks for sharing!

Hearty Lasagna Soup

Ok, I did add some extra stuff, but one of the things was onion, and one of the things I had to change was I used beef broth mix, so my bad on that one for not using a key ingredient of the recipe. So w/o my changes, it is a nice little recipe. Simple, easy, few ingredients to get a nice little soup, so that is 5 worthy. I did double batch it and added a little more liquid, more seasonings to our taste, an Asiago/Parm blend, and DH said it tasted like Lasagna in a bowl. So that is 5 worthy also :) Thanks for sharing!

Peanut Butter Honey Balls

Perfect as written! Well I did roll in some pecan meal instead of walnuts, and some I left plain. I searched for this today because for some reason I was thinking about a PB ball that was served to us at our elementary school - decades ago - so I wasnt even sure what to look for. But this is so very very close, if not it!! I can't wait to share it with my sisters sometime, to see if they remember this yummy little ball of goodness from our childhood. Thank you so much for sharing!!

Baked Spaghetti Squash Lasagna Style

Well, for what it was, it was okay. There was no fooling anyone but it wasnt claiming that. It was only fixed "Lasagna style" I used one can of tomatoes, seemed like gobs plenty and I pureed it. I used lo fat ricotta cheese. I didnt use the shells although that would have been a cute presentation. I nuked the squash in the microwave first, so I used that same dish to assemble the dish. I don't know if I will fix again. I am still on my quest to find a way that I like to fix spaghetti squash, but thank you for sharing. I am sure it is a perfect fit for some palettes.

Squash Stuffed Chicken Breasts

This was soooo delicious!! It tasted like I had been slaving all day on it, when in fact I was just trying to use up some things out of my frig!! I used all the ingredients and made as written, only I scaled back to one breast. Oh, I did cut it then pound it out, so I guess I did that different. I also fried it in a cast iron so I transferred it straight from the stove to the oven. One pot dish. Gotta love that too! I will be making this one again very soon. Thank you for sharing!

Guacamole

Must have been yummy. Every bit was gone! I didnt see until now, it is very close to Alton's and I do wish I would have added some cumin. It must have been fine without cumin also because not a drop left. His has less cilantro but I think the 3 tbls is fine or whatever your tastes are. I had a pretty good size lime and I really worked it, so I only used half. Thanks for sharing!
