About this Cook
I am the mother of 4 and step-mom of 2. Between "our" kids, we have 9 grandchildren. 7 boys and 2 little girls. I just rediscovered cooking. I havent spent much time in the kitchen for the last 20 years, give or take. We just finished building our new home and I LOVE my new kitchen. It is what has inspired me to start cooking again. I designed it and it is absolutely perfect for me. My hobby is that I love to trail ride with my friends. My favorite is when we ride and then come back to a potluck meal. But then again, after a few hours of riding, even a hotdog taste gourmet :-) The photo is my 4 children and one of my grandsons. Under "Cooks that I Like", there is a picture of my step daughter Cassie, with our granddaugther Chloe.
My favorite things to cook
I don't really have a favorite. I like to cook most anything, I just hate the clean up.
My favorite family cooking traditions
When the kids were little, we use to do a holiday cookie baking. I think we will start that one again since we have gotten away from it the past few years. We also re-started the tradition of a once a month family dinner. This includes all our siblings and their children, as well as our children and grandchildren. We added a new twist of a "theme" for each month, rather than the same ole things. It was fun and made us reach outside of our comfort zone, so I think we will continue.
My cooking triumphs
My first Thanksgiving turkey of my married life, my oven went out, so I had to cook the turkey on top of the wood stove just like little house on the prairie. It was so moist and tender and to this day, it is the best turkey that I have ever fixed.
My cooking tragedies
That I stopped cooking, and we ate way too much take out. Spent way too much money, and gained way too much weight.

Quick Chicken Divan
I had to fry my chicken breasts first. I used coconut oil (this brand does NOT taste like coconut) I seasoned with garlic/paprika/rosemary. I left skin on and once cooled, I pulled from bone and sliced on the bias. I put the broc. in that same pan with all the chicken goodies on the bottom. I dont know how much but enough to cover my pan which is pretty good size. I then put the chicken slices on next (3 breasts). I only used the cream of chicken but I did chop up some fresh mushrooms. Then I mixed soup with Miracle Whip w/pepper & Olive Oil. I added my cheese to this mixture as well. I think I may have added some milk also, but can't remember for sure. It was very very good.

Spicy Garlic Lime Chicken
Nice little kick. I deboned and sliced breasts lengthwise, too lazy to pound them out. I seasoned ahead of time for an hour or so. Fried in coconut oil that does not taste like coconut. I used alot more of the mix since I increased the surface area of chicken, plus I had twice as many to begin with. Very good. Will keep in my rotation.

Acorn Squash Soup
Yumm-o! Okay I wasnt sure how to tackle the acorn squash, but I knew I didn't want to peel it. So I cut it in half, scooped out the seeds, put it in a bowl with a little water and nuked it, but I can't remember how long. Then all I had to do was scoop it out and when I did that, it was pretty much mashed consistency. One squash was about 3 cups, but it was the smaller of the two that I had. I am sure it was fabulous as written but I did not use butter - instead I used Olive Oil. I used Lo-Sodium Chicken broth mix, and more of those granules for the bouillon. I used 1% milk in place of the evaporated. I also did not use the bacon on top, although that would have been divine. With all these changes, it was still excellent!
