Vegetarian Chickpea Sandwich Filling
Cut out the sodium. I substitute canned beans for bagged beans. I soak overnight then boil for 10 minutes and I reduce the sodium found in canned garbanzo beans. I also experiment with differnet spices, cumin, curry and/or fresh tumeric root grated into salad. Wonderful recipe that you can add or subtract ingredients for your particular taste. I make atleast one batch a week.

Winter Red Sauce over Spaghetti Squash
Delicious. This was a wonderful vegetarian alternative to spaghetti with meat sauce. My meat loving husband also enjoyed. The only changes I made were 1 can of diced tomatoes, boiled down to get rid of the water and I omitted the tomato paste. Can't wait to have the leaftovers for lunch tomorrow.

Tuna Noodle Casserole from Scratch
Comfort food that everyone enjoyed. I did have to change the recipe because my husband is allegic to fish, so I used 1/2 a chicken breast, sliced thin and cooked. Did not use as much butter as the recipe called for and the meal was still rich and delicious. Pair with a healthy salad and we have a keeper.
